ROASTED CHESTNUTS
Active time: 30 min Start to finish: 30 min

1 1/2 to 2 lb whole chestnuts in shell
1 teaspoon vegetable oil
1/4 cup water
Special equipment: a chestnut knife (optional); a large heavy skillet (preferably cast-iron) with a lid
Make a large X in each chestnut with chestnut knife or a sharp paring knife, cutting through shell. Toss chestnuts with oil in a bowl.
Heat dry skillet over moderately low heat until hot, then roast chestnuts in skillet on stovetop, covered, stirring every few minutes, 15 minutes.
Add water and continue to roast, covered, stirring occasionally, until water is evaporated and chestnuts are tender, about 5 minutes more. Serve hot.
Makes 8 to 10 servings.

Preheat your oven to 400 degrees. Meanwhile, prepare your chestnuts by cutting a slit in each one. If you don't they'll explode in the oven and make a mess. (Trust me on this one!) Place the chestnuts in a single layer on a baking sheet. Bake for about 10-15 minutes then test one to see if they are tender.
Hot chestnuts are easier to peel than cooled ones, so you may want to wrap them up in a tea towel to keep them warm as you peel them one at a time.

Put 'em on a pan, spritz with water, shake some salt on 'em and roast them in the oven for 10 minutes.

Score them with a "X" to break the shell to prevent them from exploding from internal steam buildup and put them on a cookie sheet and roast in your overn.

Fill a hot water bottle with boiling water and shove it down the front of your trousers for five minutes exactly... any more and you'll burn your nuts!!!!
