There is a location about 3 hours south of Meridian, in Louisiana called Louisiana Castle (http://louisianacastle.com/) it is absolutely BEAUTIFUL and the landscaping, etc is amazing!! Take a look at it at least, just in case that might become an option...
Something around the TN area, in Memphis near Old Hickory Lake is the Dearly Beloveds Chapel (http://www.dearlybeloveds.com/)...it has some GREAT atmosphere and is very rustic and ourdoorsy...

My alternatives might want to be... - San Francisco or wine us of a (surroundings) - San Antonio (get your wedding ceremony %on the front of the Alamo) - Orlando (interesting, plus the mouse likes weddings) - Las Vegas (the most suitable speedy wedding ceremony vacation spot)
