braising meat is using a little fat to brown and sear in the juices of a cut of meat.(i use the broiler setting till a brown crust forms) then using a covered container with a little moisture u cook on lower heat till tender. EXAMPLE when i do ribs first i use the broiler setting on my oven with some fat in the pan...then when brown i cook them in applejuice with bbq sauce covered till tender at 300F

I know that it is important to flour your meat first seasoned with a little salt and pepper and brown it off in a little oil. I like to use olive oil. It is also important to make sure that you are using a nice heavy pan, say a dutch oven. When I braise I like to use red wine but, you can also use red wine or even broth. The secret to a good braised meat is cooking it low and slow. I hope that helps some. Braising is really easy to do and it will make a cheap cut of meat taste like a million bucks!

I know very little about it, but I have done it. I put mine (beef) in a skillet to brown it up really nice, then reduced the heat and poured a stock over it with veggies. I also covered it with a lid. It turned out pretty good.

I seal my meat in a frying pan and then put it into a hot oven with some water and a stock cube. I cook it slowly until its done. Delicious!!! :D
