How about b-b-que chicken? put some b-b-que sauce on it and slowly bake it till done. easy and fast.

Season the chicken with seasoned salt, garlic powder, and black pepper. Saute them in a skillet with a little canola oil on both sides until brown. Put them in a casserole dish and pour a can of cream of mushroom soup over them and a half can of water. Sprinkle with dried thyme and put them in the oven with the lid on. Bake in a 350 degree oven for 20-25 minutes.
Make the scalloped potatoes and also fix any green vegetable you like. Enjoy!

"Creamy Lemon Chicken"
Slice the breasts in to strips of 3cm wide.
Marinade in a little butter or margarine, lemon slices ,black ground pepper and fresh garlic for 3m mins to 2 hours. in the fridge is best.
cook in a pan on medium low heat, just untill chicken is tender. remove from pan, and thicken the sauce with cornflour and some chicken stock,. not too thick though. it should be the consistency of pouring cream.
add a little cream, or plain yoghurt and heat through. then add the chicken back in.
season with salt/pepper.
remove the lemon just before serving, and garnish with parsley or chives.
serve on a bed of pasta (linguini or tagletelli or spagetti)
enjoy
takes around 20 - 30 mins to make

One Dish Chicken & Rice Bake
From: Campbell's Kitchen
Prep Time: 5 minutes
Bake Time: 45 minutes
Serves: 4
Ingredients:
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR 98% Fat Free Cream of Mushroom Soup
1 cup water *
3/4 cup uncooked regular long-grain white rice
1/4 tsp. paprika
1/4 tsp. ground black pepper
4 skinless, boneless chicken breast halves
Directions:
MIX soup, water, rice, paprika and black pepper in 2-qt. shallow baking dish. Top with chicken. Season with additional paprika and pepper. Cover.
BAKE at 375°F. 45 min. or until done.
TIP: *For creamier rice, increase water to 1 1/3 cups.

I usually Marinate my chicken in Italian Dressing
I let it soak for about 4 hours.
Then I fry it or else i bake it in the oven with a little bit of water on the bottom of the pan so it steams
Cook it at 350 for bout an hour or so if you bake it ...

what i like doing with chicken is
cut up a clove or two of garlic and melt some butter. coat the chicken in the butter and garlic. then cover them in bread crumbs. seasoned bread crumbs are good especially if you add some seasoning of your own. then cover the chicken with some shredded parmesan and bake at 350 for 35. the chicken stays moist, the parmesan gets crispy and would probably go real well with the taters.
