My wife and I are looking for a different way to make eggs. I was hoping someone here could suggest something we haven't thought of yet. If you have a recipe or a link to a recipe please post it. Otherwise just suggest the name of an egg dish. Thank you.

CRAB-MEAT GRATIN
Can be prepared in 45 minutes or less.
2 tablespoons minced carrot
2 tablespoons minced celery
2 tablespoons minced red bell pepper
1 tablespoon unsalted butter
1/2 cup chicken broth
1/4 cup dry vermouth or dry white wine
1/4 teaspoon dried tarragon, crumbled
1/2 cup heavy cream
1/2 pound fresh lump crab meat, picked over (about 1 1/2 cups)
fresh lemon juice to taste
1/4 cup freshly grated Parmesan cheese

Accompaniment: lightly toasted thin French bread slices




Preheat broiler.
In a small heavy saucepan cook carrot, celery, and bell pepper in butter over moderate heat, stirring, 1 minute. Add broth, vermouth or wine, and tarragon and boil mixture until liquid is reduced to about 1 tablespoon. Add cream and boil sauce until thickened, 1 to 2 minutes. Stir in crab meat, lemon juice, and salt and pepper to taste and divide mixture between two 1-cup shallow baking dishes. Sprinkle Parmesan over crab mixture and set dishes in shallow baking pan. Broil gratin about 4 inches from heat 2 minutes, or until bubbling and golden, and serve with toasts.

Serves 2.

Quiche is delicious, my favourite is feta cheese and broccoli.
They are easy to make too.
Just buy a pre-made pie crust, cook it according to instructions.
Mix 6-8 eggs in a bowl with a little bit of milk, salt and pepper.
Then add any combination of your other ingredients.
These can include:
broccoli
cheese (any kind)
ham
spinach
peppers
onion
bacon
tomato
etc.
Then pour into the crust and cook for about half an hour, until the eggs are cooked all the way through.

I also like toad in the hole.
Just butter a slice of bread on both sides and cut the centre out to make a circle. Put it into a frying pan on medium heat, break open an egg and put it into the hole in your bread. Let it cook for a few minutes, then flip it over, bread and egg, and cook on the other side until done. Eat it with ketchup and it is delicious!

Garlic and Tomato Quiche

Ingredients:

1 tablespoon unsalted butter
3 cloves of garlic, minced
2 large ripe tomatoes, peeled and chopped, about 1 pound
1 tablespoon tomato paste
1/4 teaspoon oregano
sea salt and fresh ground pepper to taste
3 eggs
2/3 cup half and half
1-9 inch pie shell
1 tomato, sliced thinly
4 ounces of Swiss cheese
2 tablespoons grated Parmesan cheese

Preparation:

Preheat your oven to 350°F.

Melt the butter in a sauté pan. Sauté the garlic gently so as not to add color. Add the chopped tomatoes and tomato paste and cook until fairly thick. Add the oregano, salt and pepper to taste and cook for a couple more minutes.

Beat the eggs slightly and blend with the half and half. Add the tomato mixture and blend.
Line the pie shell with the sliced tomato and top with the cheeses. Carefully pour the custard mixture over the top.
Bake for about 40 minutes until a knife come out clean when inserted into the middle of the pie.
Let the quiche sit for about 15 minutes before cutting.

Chicken Scramble Casserole
10-11 oz. creamy chicken and herb soup
1 1/2 cups shredded Swiss cheese
12 slightly beaten EGGS
1/2 cup milk
2 cups frozen vegetables of choice
1 cup chicken, cooked and cubed
(use canned chicken for ease)
1 cup canned French fried onions

In medium bowl, stir together soup and cheese; set aside. Spray skillet with non-stick cooking spray. Add eggs, milk, vegetables, meat, and chives. Cook until eggs are set but still glossy, stirring gently so uncooked egg flows underneath. Fold in soup mixture. Spoon into 12"x7" baking dish. Cover and refrigerate 2-24 hours. Uncover and bake at 350°F for 40 minutes. Sprinkle with French fried onions. Bake an additional 5-10 minutes.

My son used to make his own egg sandwiches often when he was younger. It was quick and simple and virtually no clean up. He'd spray some cooking spray into a cereal bowl, crack an egg into it.. scramble it up, add a bit of chopped ham (I sometimes kept leftovers from dinner already chopped in the freezer for him) some onion, milk and maybe a bit of grated cheese. He'd scramble it a bit more, put it in the microwave and cook on high for 45 seconds while making his toast. When it was done he'd scrape around the edge of the bowl with his knife, and slide it out onto his toast. Voila!

cheese and egg , put the grated cheese around a small plate and crack the egg in the middle and bake in the oven till the egg is set nice with warm toast

Egg sandwhich

2 bread slices
1 sunny side up egg
1 slice american cheese
put it together and you have an egg sand which. you can add lettuce, onion, hot sauce and all of that stuff. it is also good on a bagel.
