Hi, it will keep ok for a week or so but it will keep longer if you pour it into ice cube trays and freeze it. Then you just need to pop out as many cubes as you need when cooking.

The other important factor is keeping the air out - hence sealed bottles keep for ages and ones still using cork to seal them are kept on their side to help prevent the cork drying out (and thus shrinking and providing a poorer seal).

As suggested, freezing is a good option. Its better to seal it in strong plastic containers to keep the air out too. When defrosting put the wine cubes in a glass container because the alcohol can easily pick up a plastic flavour - better than defrosting in situ.

And if you can't be bothered with all that, just make sure you tightly reseal the bottle before chilling.

(All the stuff about not putting red wine in a fridge doesn't apply for stuff you are going to use for cooking).

RED Wines do not belong in the refrigerator. Keep them in a cool place around 55-60 degrees. Uncorked they can last for years. Once opened use the amount needed for cooking and then recork it and keep it cool. Heat will ruin the wine.

I've taken to buying the 4 packs of small bottles of wine to use for cooking since I don't normally drink wine. The whole bottle get used up so no leftover wine.

It won't last that long, even refrigerated. Freeze the leftover wine in ice cube trays, then store them in a zip top bag until you need 1 or 2, no need to melt them first, just drop them into your sauce or whatever.

It is only a suggestion that red wine be served at room temp for drinking, I prefer mine cold.

Wine does not keep long in my kitchen I use it frequently in cooking.
If you chill a red wine, this exaggerates the tannins, gives the wine more structure but, makes it less expressive.
Red wine should be kept at about 58 degrees no colder or the taste is impaired.
Don't waste good refridgerator space.

I think cooking wine for marinades and dishes will last for a long time in the fridge because alcohol is the preservitive. But I would replace it after two years if you havn't used it all by then.

Actually, if you only use it for cooking it will keep (for only the purpose of adding wine flavor to sauces and meats) indefinitely if you reseal it, whether or not you keep it in the fridge. Wine that goes bad for drinking is surprisingly unaffected for cooking purposes.

you never put red wine in the fridge it must be kept in room temp and when u open it you leave it for a short period to mellow if it comes out of the fridge it will taste like vinegar
