I'm looking for ice cream recipes online.. and I found that you finesh the ice cream and put it into the friser, and after 2 hours, you get it out and put it into the ice cream maker..
it seems that the ice cream is done.. why would i put it into the ice cream maker? what does it do exactly?

It breaks up the frozen ingredients and makes them creamier. There's usually rock salt in the wall of the ice cream maker, too, which reacts with ice to keep the ingredients cold enough that while they are getting soft, they aren't melting down. If you need a cheap, easy ice cream maker, you may want to try one of the ball ones, LL Bean and Eddie Bauer supply them, I think. It's the same concept as a traditional model, but in a ball so you can roll it around the floor or shake it and you have ice cream in a matter of half an hour!

The ice cream maker churns or stirs the semi-frozen liquid so that large ice crystals don't form as it freezes. When the liquid gets too stiff to churn, which is about 30 minutes with my ice cream maker, you can pull out the stirring paddle and put the container in the freezer to finish freezing.

If you froze the ice cream batter without the constant stirring, it would taste the same but wouldn't have the smooth, creamy texture.
