Eggless, milkless, butterless cake
INGREDIENTS:
1 cup brown sugar
1 1/4 cups water
1 cup raisins
1/3 cup shortening
1/2 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 cups all-purpose flour
5 teaspoons baking powder

DIRECTIONS:
In a saucepan, combine brown sugar, water, raisins, shortening, nutmeg and cinnamon. Bring to a boil, and continue boiling for 3 minutes. Remove from heat and allow to cool.
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. Sift together flour and baking powder.
In a large bowl, combine the raisin mixture with the flour mixture. Pour into prepared pan.
Bake for 45 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean

Take a box of Chocolate cake mix, and stir in a can of packed pumpkin. So moist and yummy. It has lots of fiber without all of that extra fat! Here's the link to the recipe. You can also make it as a cake.

Raspberry Angel Food Cake
10 egg whites
1-1/4 teaspoons cream of tartar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 cup sugar
1 cup cake flour
2 cups fresh raspberries
In a mixing bowl, beat egg whites until frothy; beat in cream of tartar until soft peaks form. Add the extracts. Gradually beat in sugar until stiff, scraping bowl occasionally. Sift flour over beaten whites; sprinkle with berries. Gently fold flour and raspberries into batter until well mixed. Pour into an ungreased 10-in. tube pan. Bake at 325° for 40-45 minutes or until lightly browned and entire top appears dry. Immediately invert cake pan; cool completely, about 1 hour. Yield: 16 servings.

1 cup raisins
1 cup diced dried fruit
2 cups water
2 cups all-purpose flour

2 eggs, beaten or egg substitute equivalent
1 cup unsweetened applesauce
2 tablespoons liquid sweetener
3/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup chopped nuts
Combine raisins, fruit and water in a saucepan; cook, uncovered, until water is evaporated and fruit is soft. Set aside to cool. Meanwhile, in a large mixing bowl, combine flour, baking soda, salt, nutmeg and cinnamon. In another bowl, combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and reserved fruit mixture. Stir into dry ingredients and blend thoroughly. Pour into a greased 10-in. fluted tube pan. Bake at 350° for 35-40 minutes or until the cake tests done. Yield: 32 servings.

aw. that is so caring and nice of you.
its hard to make cake from scratch. you can buy one of those boxes that contains the flour (about $1). and all you need to do is mix with water and bake.... just follow the instructions on the box. good luck
