I want to make a pumpkin roll recipe for Thanksgiving and all the recipes I see say you have to roll it right after it gets out of the oven. Wouldn't this cause the cake to crack?

Make sure the pumpkin roll is cooked fully before taking it out of the oven. (15-20 minutes) If it is not fully cooked it will stick to the tea towel and make a mess when you need to unroll it.
The trick is to let the pumpkin roll cool enough that you don't burn your fingers, (maybe 5 minutes in the pan on a cooling rack) but you do not want to wait to roll it until it is cool or it will crack! The pumpkin roll needs to be rolled when it is warm and soft (in the tea towel as mentioned in the other answer) and when it has totally cooled (20-30 minutes) you will unroll it and put the filling on. Then you will roll it back up with the filling in and it will roll easier because it should have already taken the shape partially. There are many ways of cooling the rolls some people say to put the cooling roll in the fridge or freezer, that will help it cool faster, but is not necessary. Once the roll is finished it must be chilled for at least an hour to get the filling more solid.

bake the pumpkin roll (the cake part) on a jelly roll pan or i use a long cookie sheet it only takes about 15 minutes then let it cool. turn it on to a clean dish towel that has been dusted with powdered sugar then add your filling and roll it up jelly roll style,if its hot it will break but when it is cool it rolls up easy. i even put mine in the fridge for about 20 minutes before i add filling and then roll it up. it is really a simple method. lots of luck to you. i love pumpkin rolls.
