Catfish is so simple to fry and it is also completely delicious.
Dip the pieces in seasoned cornmeal and fry. I like to use yellow cornmeal with Zatarain's creole seasoning powder but any of those Emeril type essences will do or you can used a little red pepper, black pepper, touch of garlic or onion powder, and salt.
Better to fry outdoors because the smell gets into everything in the house.
About 1 cup of cornmeal per two pounds of fish. Spices to taste.
Dip the fish in the seasoned cornmeal and put it in the refrigerator for a few minutes so the cornmeal sticks well and coats the fish.
Oil: I use corn oil but any vegetable oil is okay except olive oil. Canola oil stinks when you deep fry so you may want to stay away from that one.
My Mom used to just dip the fish in yellow cornmeal with salt and pepper: that is it. Her catfish was wonderful.
Hint: do not use self rising cornmeal if you are going to fry potatoes or anything else with the fish because the baking powder or soda in the cornmeal will not allow things to get crisp, especially potatoes.
Serve with lemon slices an hush puppies you fried in the oil you cooked the fish in.

Catfish Cakes
INGREDIENTS
1 pound catfish fillets
1 medium onion, chopped
1 teaspoon prepared yellow mustard
1 tablespoon creamy salad dressing (e.g. Miracle Whip)
1/2 teaspoon Old Bay Seasoning TM, or to taste
2 1/2 cups coarsely crushed buttery round crackers
1 egg
1 cup vegetable oil (for frying)
DIRECTIONS
Place catfish in a saucepan with enough water to cover. Bring to a boil, and cook until fish flakes easily with a fork. Drain off water, and mash up the fish. Stir in the onion, mustard, salad dressing, Old Bayâ¢, cracker crumbs and egg. Mix until evenly blended.
Heat oil in a large heavy skillet over medium-high heat. Form the fish mixture into patties, and fry in the hot oil. Drain on paper towels, and serve hot.

CATFISH IN SPICY TOMATO SAUCE
1 (28-oz) can whole tomatoes in juice
1 tablespoon olive oil
2 garlic cloves, finely chopped
Rounded 1/4 teaspoon cayenne
3/8 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/8 teaspoon ground allspice
1/8 teaspoon ground ginger
1 1/4 teaspoons salt
1 1/2 teaspoons sugar
6 (5-oz) catfish fillets
3 tablespoons chopped fresh flat-leaf parsley
Put oven rack in middle position and preheat oven to 400°F.
Purée tomatoes with their juice in a blender. Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook garlic, spices, and 3/4 teaspoon salt, stirring, until garlic is golden, about 1 minute. Add tomato purée and sugar and briskly simmer, uncovered, stirring occasionally, until slightly thickened, 6 to 8 minutes.
Pour sauce into a 13- by 9-inch baking dish. Pat fish dry and sprinkle with remaining 1/2 teaspoon salt. Arrange fillets in 1 layer on sauce, tucking each tail end under if necessary to fit, and bake until fish is just cooked through, 10 to 12 minutes. Serve sprinkled with parsley.
Makes 6 servings.

the best way to cook catfish -- 1/2cup of flour mixed with 1/2 cup of yellow cornmeal--rinse fish fallet well with water then coat both sides of fish and fry in skillet about 3 minutes on each side -- i use canola oil and about 1 inch deep in fry pan--if you fry fish too long it becomes tough - serve with tarter sauce - french fries-hush puppies and 1 can of cold pork-n-beans.......wow what a great idea -- i think i will cook fish myself today . ENJOY!!!

I love blackened catfish with mango salsa.... YUMMMMMMY (was my dinner last night :) )
Blackened Catfish
1 teaspoon cayenne pepper
1 teaspoon lemon pepper
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
2 catfish fillets
1 tablespoon butter, melted
1/2 cup Italian salad dressing
Preheat oven to 350 degrees. Lightly grease a medium baking dish. In a medium bowl, mix cayenne pepper, lemon pepper, garlic powder, salt and pepper. Brush both sides of catfish fillets with butter. Rub fillets with the cayenne pepper mixture on both sides.
Heat a large skillet over medium-high heat until really hot. Add fillets, and fry approximately 2 minutes on each side, until slightly blackened. Remove fillets and place in the baking dish. Coat the fillets with Italian salad dressing. Bake 30 to 35 minutes in the preheated oven, until fish is easily flaked with a fork.
Mango Salsa
1 mango - peeled, seeded and chopped
1/4 cup finely chopped red bell pepper
1 green onion, chopped
2 tablespoons chopped cilantro
1 fresh jalapeno chile pepper, finely chopped
2 tablespoons lime juice
1 tablespoon lemon juice
In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice. Cover, and allow to sit at least 30 minutes before serving.

There are several ways.Just like any other fish.You can put corn bread on it and fry it. Drakes crispy fry mix is what I love to use.In any grocery store.You can put bread crumbs on it and fry it or bake it.Or just put lemon on it in aluim.foil and put it in the oven and bake it.Around 350 for 20 minutes. Depends how many peices.Go to cook.com and look at fish .You can put how many servings and they will tell u how long and what temp.Good luck

Hey, can I be invited when you cook them,
in Moline, Illinois they had the greatest catfish and it was always fried in a batter....however i tried it at home, and mine was never good....but snif, snif, I live in Pennsylvania and can't get that good Catfish...............hear me crying???

I cut the fillets into chunks, soak them in Tobasco sauce for an hour, cornmeal and fry. They are not spicey hot when cooked but have a great flavor!

Use fillets,chunks or whole fish. Dip into beaten eggs then into instant potatoes. Deep fry until golden brown. YUM
