Just remember that the broth is already diluted, so don't add water! Also, feel free to add other herbs of your choice.

1 large onion, chopped
1 cup chopped carrots
1 cup sliced celery
2 garlic cloves, minced
1/2 cup uncooked wild rice
2 (14 ounce) cans swanson vegetable broth
1 cup uncooked long-grain white rice
2 tablespoons chopped fresh parsley
Heat oil in a large nonstick skillet.
Add onion, carrots, celery and garlic and cook until tender.
Add wild rice and broth.
Heat to a boil.
Cover and cook over low heat for 25 minutes.

Heat the butter in a saucepan and cook the onion until slightly tender.
Add the rice and cook, stirring, until it is golden.
Do not brown.
At the same time bring the chicken broth to a boil in a seperate pan.
When rice is golden, add broth to rice.
Cover tightly and simmer for 20 minutes.
I'd suggest adding salad or green beans to this meal and serve it with some kind of fruit pie or cobbler. Good luck!

What about a wild rice, cooked in chicken stock. When done, add the juice of 1/2 lemon over the top of the rice, stir until mixed and sprinkle with diced, flat leaf parsley. Nutty, slight tartness, goes perfect w/pork.

Pork responds well to something with a hint of sweetness:
Rice with Almonds and Raisins
1 bag brown rice (I use Success Brand)
1/4 cup sliced almonds
2 tablespoons dark raisins
3 tablespoons butter
1 tablespoon parsley
1. Boil rice according to package directions (10 minutes on stove).
2. Saute' the almonds in butter until soft.
3. Add raisins and cook until a little soft.
4. Mix the cooked rice and the almond/raisin mixture together.
If you have any saffron a wee bit to make the rice yellow is a wonderful touch or you can use
Sazon's seasoning packet with saffron for yellow rice (Sazón with Azafrán)
