Temperature is no more than 80 Fahrenheit, all equipment is sterilized, there's a grapefruit for acidity, 5 kilos sugar for 35 litres water, plenty of nutrient, plenty of wine yeast and the water was stirred to give it lots of oxygen, then the unit was sealed to keep out bad bugs. Why's it not finished fermenting?

How long has it been fermenting? It's not going to ferment completely overnight.
You have all the preliminary steps good so far. How are you testing it to determine whether or not it's done fermenting?

Grapefruit??? I think the acidity is hurting the yeast.
Maybe we should trade recipes. My root beer came out more beer than root.

How long has it been fermenting? What's its specific gravity? It might be possible that it is done fermenting

Who in God's name told you to stir it to put lots of oxygen in? Yeast cracks sugars to get oxygen in order to survive, resulting in alcohol. You stirred in oxygen, molds and bacteria. Sit back and watch it rot.
