Brushetta

Sourdough french bread or Tuscan country bread, 4 slices
extra virgin olive oil
1-2 cloves fresh garlic, peeled and minced
3 ripe tomatoes, diced
10-12 fresh basil leaves, chopped
salt & pepper

Mix together tomatoes, garlic, olive oil, basil, salt & pepper. Set aside. Grill both sides of bread. Rub one side of the bread with a garlic clove that has been peeled. Add tomato mixture. Garnish with a basil leaf. Buon appetito!!!

Garlicky Shrimp Scampi

1 stick sweet butter
1-2 tbls fresh minced garlic
2 pounds lg, fresh cleaned shrimp or prawns
3 tbls olive oil
1/4 cup white wine
lemon wedges

Melt butter in large skillet on medium heat, add oil, garlic and wine. Add prawns and sautÈ until just firm and slightly pink. Squeeze lemon over and serve. Great with rice or crusty french bread.

Garlic Ice Cream

3 cups whole milk
1/2 teaspoon freshly chopped garlic
1 vanilla bean, split in half
1 cup heavy cream
1 1/2 cups granulated sugar
9 egg yolks

Put milk, garlic and vanilla in a saucepan. Bring to a boil and remove from heat.

In mixing bowl, blend cream, sugar and egg yolks.

Strain the scalded milk into the egg and sugar mixture, stirring constantly.

Return the combined mixture to the pan and stir continuaously over moderate heat until it coats the back of a spoon. About 10-15 minutes.

Cool in an ice bath and freeze until firm.

*makes 4-5 servings.

GARLIC POTATOES
This recipe for potatoes cooked with whole, unpeeled garlic cloves has been a favorite of Tante Marie's students ever since it was taught to us by Judith Olney. The secret is to cook the potatoes and garlic in plenty of olive oil so the garlic doesn't burn. Serve this dish with roasted chicken or a chicken sauté.
3/4 cup olive oil
12 medium-size new potatoes (about 1 pound), halved if necessary to keep them uniform in size
24 garlic cloves, unpeeled
6 bay leaves
4 sprigs thyme
4 sprigs rosemary
Coarse salt
Freshly ground black pepper



Cover the bottom of a glass baking dish with the oil. Toss in the potatoes and garlic, making sure both are coated with the oil. Toss in the bay leaves and sprigs of herbs and season generously with salt and pepper.
Bake this dish in a 425°F oven until the potatoes are tender when pierced with a fork, about 35 minutes. Open the oven and stir the potatoes twice during the cooking time. (When serving, be sure to show the guests how to squeeze the softened garlic and mash it into the potatoes.)

Choose firm and fresh-looking new (thin-skinned) potatoes. Any long thin-skinned potatoes can be called fingerlings. The yellow-fleshed ones are Yellow Finn and Yukon Gold, and there are many varieties of white and pink potatoes

Do not do anything about it! Actually I'm a huge garlic fan too. Eating garlic can help prevent cancer and other diseases too. I love Chilli Garlic Crab, Sweet n sour garlic prawns, mushrooms sauteed in garlic, pan-fried garlic chicken,... and loads of other garlic-based dishes. Garlic is the best spice to enhance a dish, so GO FOR IT!!!
