What would be the best rabbit to eat?

Personally I like wild cottontails the best. As far as domestic rabbits go the most important thing is the age of the rabbit and not it's breed. Young fryers are tender no matter what breed just some are much larger (Checkered Giants, Blk Satins etc) and some are one person meals like a Cornish game hen. (Dutch Belted for example)

If you're talking about hunting wild game, then the European Hare are really tasty. Not much meat to a wild rabbit though, but you can eat of the front and hind legs, and don't forget the two strips of 100% lean tenderloin down both sides of the spine. here is no meat to speak of anywhere else, but if you 'gut' the animal, then you can put the carcass in the oven with veges and make a delish stew.
