Pasta. I've just found out I am diabetic and learned that carbs turn into sugar and must be extremely limited in my diet...how does one live with reduced carbs? Especially pasta in all of it's lovely forms?

Definately make pasta carb-free and calorie-free!

I think fried chicken is a good answer.
However-I have found that many high fat and calorie foods can be made more healthy by substituting healthier ingredients-for instance whole wheat flour and veg oil for fried chicken, and remove the skin. Whole wheat pasta vs. the semolina version. Add more vegetables to everything.
With sweets, I think the only answer is moderation, alas.

Cheese. I guess it's healthy in some ways - it contains calcium. But it's also full of fat :-(
