"Homemade Pizza Supreme" - 2 pizzas

1 (1/4 oz.) pkg. active dry yeast
2 cups warm water (110*-115*)
3 tbsp. vegetable oil
1 1/2 tsp. salt
4-6 cups all-purpose flour
SAUCE:
2 (8 oz.) cans tomato sauce
1 1/2 tsp. grated onion
1 tsp. dried oregano
1/4 tsp. salt
1/8 tsp. pepper
TOPPINGS:
4 cups (16 oz.) shredded mozzarella cheese
4 oz. Canadian bacon; diced
1 (3 1/2 oz.) pkg. sliced pepperoni
1 medium sweet red pepper; sliced
1 medium green pepper; sliced
1 (2 1/4 oz.) can sliced olives; drained
1 cup chopped onion
1 cup grated Parmesan cheese
1/2 cup minced fresh basil

In a large mixing bowl, dissolve yeast in warm water. Add oil, salt and 2 cups of the flour. Beat on medium speed 3 minutes. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bow, turning once to grease top. Cover and let rest in a warm place for 10 minutes.
Combine sauce ingredients; set aside. Divide dough in half. On a floured surface, roll each portion into a 13" circle. Transfer to two greased 12" pizza pans; build up edges slightly. Bake at 375* - 15 minutes or until lightly browned. Spread with sauce; sprinkle with toppings. Bake 15-20 minutes or until cheese is melted.

This is a bit of a cheat but it saves work:

Buy a large Kraft Cheese Pizza mix. Prepare the flour mixture. (altitude cooking - add more flour). It has to rise for approx 20-25 minutes. Take the sauce and add cayenne pepper.

Prepare a couple pizza trays or cookie trays. (oil and flour them)

Fry up a pound of chopped bacon. Drain off the oil. Add a pound of lean hamburger and brown the mixture. Add a can or two of sliced mushrooms and a diced green pepper.

Stir the mix and add the packet of Parmesan cheese. Add oregano and basil - stir and cover the mixture.

Take 1 pound of good soft mozzarella cheese and shred it into a bowl.

Now that your pizza dough had time to rise, roll it out onto the pans. Give yourself a nice edge to hold everything in.

Put the cheese down first then spoon the meat and green pepper mix over the cheese. You'll find extra packets in the Kraft box. Sprinkle this over the pizza(s)

Bake at 375 F for 18 min + - check the underside of the pizza for browness.

Once done, allow to to sit on a cooling tray for five minutes before cutting.

You'll be surprised how good this tastes....

The secret to good pizza is the dough, the sauce, the cheese, and a pizza oven stone. You can buy the pizza dough flour in the box if you want to make it from scratch. I use a marinara sauce, sprinkle on some garlic powder, a good layer of mozzarella, add some mushrooms, dribble some virgin olive oil over the top, place on the stone and let it get nice a crispy on the bottom and gently melted on the top. It took me several tries before I really cooked it right.

PIZZA MARGHERITA
The classic combination of tomatoes, basil and cheese is unbeatable, especially with the addition of prosciutto. Pair the pizza with a salad of radicchio and romaine in an oil and vinegar dressing. Follow up with cannoli and espresso.
All purpose flour
1 10-ounce tube refrigerated pizza dough
1 14 1/2-ounce can seasoned pasta-style tomatoes, well drained
1/2 cup slivered thinly sliced prosciutto
1/3 cup thinly sliced fresh basil or 1 tablespoon dried
1 cup (packed) grated mozzarella cheese (about 4 ounces)

Preheat oven to 425°F. Lightly sprinkle heavy large baking sheet with flour. Unfold dough on prepared baking sheet. Stretch and/or roll dough to 9x12-inch rectangle. Sprinkle tomatoes, then prosciutto and basil over dough, leaving 1-inch border. Top with cheese.
Bake pizza until cheese melts and crust is golden brown, about 12 minutes. Transfer pizza to work surface. Cut into squares and serve hot.

Makes 2 Servings.

Hi,
you can use a scone recipe for the base if you don't have yeast (or you're in a hurry!). Just make up a normal scone dough (2 1/2 cups s.r. flour, 1tsp sugar, pinch salt, 30g butter rubbed in, 3/4 cup milk and about 1/2 cup water stired through), then roll it out fairly flat, and bake it in a very hot oven for about 7 to 10 minutes, until just cooked but not too brown. Take it out, turn it over and put everything on the browner side. We go the whole hog when it comes to pizza: tomato paste with salt, garlic and herbs mixed in, topped with tomatoes, olives, marinated artichoke hearts, semi-sundried tomatoes, mushrooms, capsicum, pineapple, onion, and a good sharp cheese for a nice flavour (I think mozzarella alone is a bit bland). Rebake it until it's sizzling but before the base gets too brown!
Have fun!

easy way

trader joes sells premade dough

grab some speghetti sauce and mix in a few spices you like(i.e. italian seasonings) _ I don't like pizza sauce so I've used olive oil lightly brushed onto the dough.

put on some mozzarella and whatever toppings you like and pop it in the oven.

Hi VAJENNA, Well Jess b. has "one-uped" us all with her dough recipe! However, I like "Boboli", it's pre-made and you just add basically anything you want. I like marinara and/or pesto sauce, with lots of cheeses, artichoke hearts, mushrooms, left-over chicken/ham are great too. Be creative! XOXO Ciao! Moonpie
