"Golden Scalloped Potatoes" - 8 servings
1/4 cup butter
3 tbsp. flour
1 tsp. salt
Dash pepper
3 cups milk
5 large Yukon gold potatoes; peeled and thinly sliced
In a large saucepan over medium heat, melt butter. Stir in flour, salt and pepper until smooth; gradually add milk. Bring to boil; cook and stir for 2 minutes or until thickened and bubbly.
Place potatoes in a greased 9" square baking dish; add sauce and stir gently to coat. Cover and bake at 325* - 30 minutes. Uncover; bake 30-40 minutes longer or until potatoes are tender.

Sprinkle about half of the flour mixture over the potatoes; repeat with another layer of potatoes and the flour mixture and top with remaining potato slices.
Dot with butter then pour hot milk over potatoes. Cover and bake at 375° for 45 minutes.
Uncover; sprinkle cheese over the top.
Return to the oven and bake, uncovered, for an additional 15 minutes, or until scalloped potatoes are tender and cheese has melted.
Scalloped potatoes serves 6 to 8.

SCALLOPED POTATOES
Saturday dinner. From Miraval Resort & Spa in Catalina, Arizona. This dish tastes indulgently creamy, but it's made with rice milk, so it's low in fat.
Vegetable-oil cooking spray
2 cups plus 2 tbsp plain rice milk (or skim milk)
2 tbsp peeled almonds
1/8 tsp freshly ground black pepper
1 tsp minced roasted garlic
1/2 tsp sea salt
1/8 tsp ground nutmeg
2 tbsp cornstarch
3 russet potatoes, peeled and sliced as thinly as possible
Preheat oven to 375°F. Coat an 8" square pan with cooking spray. Combine 2 cups milk, almonds, pepper, garlic, salt, and nutmeg in blender and process until smooth. Pour into a medium saucepan and heat to low boil. In a small bowl, combine remaining 2 tbsp milk and cornstarch; whisk slowly into boiling sauce and stir until thickened, about 2 minutes. Place potato slices in large bowl and toss with sauce. Layer potatoes in baking pan and cover evenly with remaining sauce. Bake 15 to 20 minutes or until potatoes are soft. Cool 5 minutes before serving.
Nutritional analysis per serving: 130 calories, 2.5 g fat (0 g saturated fat), 26 g carbohydrates, 2 g protein, 2 g fiber

THIS ONE IS REALLY GOOD...AND EVEN BETTER WITH CHOPPED HAM!
12 cups red potatoes, peeled and thinly sliced
1 (8 ounce) pkg. cream cheese, softened
1/2 cup sour cream
1 cup chicken broth
1 (8ounce) bag shredded cheddar cheese
Salt & Pepper to taste
-if you add Ham, you want 2 cups of chopped ham
Preheat oven to 350 and spray a 9x13 pan with cooking spray.
In a large bowl, mix the cream cheese, sour cream and chicken broth until smooth, stir in the salt and pepper. Add 1 3/4 cups of the cheese and stir. Coat potatoes with this mixture and spoon into prepared dish. Bake at 350 for 1-2 hours depending on your over.

I learned at my Mother's side:
preheat oven to 375 degrees F.
scrub and peel 8 russet potatoes.
Slice into 1/8th inch quarter moons
Slice 1 yellow onion
Shred 1 pound sharp cheddar cheese
Layer in a 4 quart greased casserole, dust ea. layer with flour (for thickening), ending with cheese, seasoning with salt and pepper between layers.
Fill 2/3's with milk.
Cover and bake for one hour
Stir thoroughly. If potatoes are cooked (soft) return to oven uncovered to brown. (10 minutes)
Serve with green salad and sour dough bread.
