I was at a shop today, and asked the girl if she has to work every weekend (we've been getting along, I usually get served by her), and she was telling me about how she's planning on going to uni next year and that she works every weekend.
Then the sale was finalised, and she was serving another customer. As I turned to go she specifically said goodbye to me. Normally once they've dealt with a customer their whole focus is on their next customer.
So do you think I should make something of this? If so, what should I do next time?

I believe she may just being friendly right now. I wouldn't take simple politness as something that tells you that they really like you. Just for now try to be friends with her and if things get stronger between you two and you clearly like each other more than friends than ask her out on a date. But you shouldn't make something out of a simple goodbye.

I wouldn't jump the gun speedy. I ate today with my daughter and as we were leaving, the waitress, who was waiting on someone else, said, bye have a nice day. She was female and so am I, and we certainly aren't gay. It's all part of being a good waitress, acknowledging your customers. It brings them back and they tip good if they get personalized service. I was a waitress for years. I'd eat there a few more times and see how it goes, don't think a woman likes you cause she said bye????

You would only make something of it if you are a psycho stalker. Don't let this minor bit of familiarity turn you into "that guy"
I get that all the time because I flirt shamelessly with all pretty girls, but it means nothing to me or them.

it may have been nothing but next time you see her tell her something nice about her appearance while looking her in the eyes, see what happens

well, do you really like to eat there, is there another restaurant in the area that you can go to in case it doesn't work out when you speak to her regarding your curious feelings? if yes then go for it, if not, don't stalk her, that will make her feel weird.

You are taking a big leap on that one. You're thinking with your heart not your head.
That does not necessarily indicate anything. Sorry.

Hard to tell. If you like her, you should ask her out to dinner...or Starbucks.
