I have never seen anyone eat the mango skin, just curious.

Yes, it is perfectly edible. It can be eaten along with the pulp like an apple. You wouldn't just eat the skin alone. It tastes different from the pulp, not sweet at all and definitely a little tougher. People sometimes eat the skin because they are in too much of a hurry to peel the mango. The pit (stone), of course, should not be eaten. Enjoy!

The skin of a ripe mango is not edible. You wouldn't want to eat it anyway as it has a truly horrible aftertaste. It is possible to eat the skin of an unripe (green) mango but one shouldn't eat too much as it is bad for the stomach.

I don't care for the taste of the skin, but in Mexico they eat the skin of the green ones with lemon, chili powder (cayenne) and salt. My boyfriends all thought it was very good but I guess it is an acquired taste that I never acquired. I hope that this was some help to you.
