I want to suprise my sister in law for dinner.

My fave (I live in WI):
2 t salt
1 t paprika
1/2 t onion powder
1/2 t thyme
1 t pepper
1/4 to 1/2 t cayenne pepper
1/2 t garlic powder

Great on chicken, turkey, or pork.
Haven't tried on beef....

Midwesterners don't like much spice, do they? I'd suggest kosher salt and a smidge of black pepper.

Other varieties are good too, if y'all can handle the flavor....

Smokin' Big Dawgs Sweet Rib Rub

1 C. Brown Sugar
1/3 C. Paprika
1 Tbsp. Black Pepper
2 Tbsp. Kosher Salt
1 Tbsp. Garlic Powder
1 Tbsp. Onion Powder
2 Tbsp. Lemonade Mix (with the sugar added)

6 racks of ribs, baby back or spare

Mix all ingredients in a bowl. Rub generously on both sides of ribs 15 minutes before cooking. Makes enough to do 5 to 6 full racks. Does not store well, tends to clump.

Smoke ribs for about 3 hours, adding wood and charcoal (if useing charcoal) as needed. Ideally you want to have just a light amount of white smoke coming from the exhaust of the smoker. After 3 hours remove ribs from smoker and wrap in heavy duty foil. Return to smoker and cook for 2 hours. No need for any more wood, just heat. Remove ribs after 2 hours and remove foil. Return ribs to smoker and baste with sauce. Cook about another hour.. Ribs are done when you can hold a full rack in the middle with one hand and it will bend but not crack or break.

Rubs: 8 tablespoons salt
8 tablespoons sugar
8 tablespoons brown sugar
8 tablespoons ground cumin
8 tablespoons chili powder
8 tablespoons freshly cracked black pepper
4 tablespoons cayenne pepper
16 tablespoons paprika

1. Simply mix together.
2. Use liberally.

Kansa City Rub: 2 tablespoons brown sugar
2 tablespoons ground paprika
1 tablespoon white sugar
1 tablespoon garlic salt
1 tablespoon celery salt
1 tablespoon chili powder
2 teaspoons fresh ground black pepper
1 teaspoon ground cayenne pepper
1/2 teaspoon dry mustard

1. Combine all the ingredients in a bowl and mix well.
2. Store any unused rub in a sealed container in the freezer.

1 cup sugar
1/4 cup celery salt
1/4 cup garlic salt
1/4 cup seasoning salt
1/4 cup onion salt
1/2 cup Hungarian paprika
1/4 cup black pepper
2 tablespoons chili powder
1 tablespoon cayenne
1 teaspoon garlic granules
1 teaspoon onion powder
1/2 tablespoon gingerroot
1 tablespoon dry mustard

Thunder Baby: 8 tablespoons light brown sugar, tightly packed
3 tablespoons kosher salt
1 tablespoon dried ancho chile powder
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon jalapeno seasoning salt
1/2 teaspoon Old Bay Seasoning
1/2 teaspoon thyme, rubbed between the fingers
1/2 teaspoon onion powder

1. In a bowl, combine all dry ingredients and mix well.
2. Place each slab of baby back ribs on a piece of heavy-duty aluminum foil, shiny side down, or plastic wrap.
3. Sprinkle each side generously with the dry rub
4. Pat the dry rub into the meat.
5. Refrigerate the ribs for a minimum of 1 hour (overnight is much better).

Lemon Pepper: 6 tablespoons lemon pepper
2 tablespoons ground thyme
2 tablespoons paprika
2 teaspoons garlic granules
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon msg
1/4 teaspoon ground coriander
1/8 teaspoon ground cumin
1/8 teaspoon cayenne pepper

1. Mix all ingredients together with a large spoon, removing all lumps.
2. Apply generously to steaks or burgers.
3. Marinate for 30 minutes or up to 2 hours before grilling.
4. Stores for 3 to 6 months.
5. Makes 5/8 cups.
6. Store in covered glass container.

Old Bay Seasoning, cayenne pepper,paprika, chili powder, garlic powder, onion powder and sugar in equal amts. Rub on Ribs, pork butt, or chicken. Grill, bake or crock pot it. I lived in Illinois for 39 years. Got this recipe there, and brought it home to Sweet Home Alabama when I retired. It plays well in North or South. lol
