Is it true that dented can good pose a health risk, assuming that the can isn't punctured, or is this just an old wives tale?

What you say is true, however, there are simple evaluation techniques that can be used to determine if the food will be safe or unsafe.

When a can is dented near a seam or a junction, it makes it possible for air to enter the can. A sharp dent can cause a pinhole in the can, which could also allow air to enter. This air, combined with the moisture in the can, allows the growth of microorganisms. These microorganisms cannot be killed by cooking. Consumption of this food could potentially result in botulism. Cans that are bulging or have rust that will not wipe off are also deemed unsafe.

Feel the can and visually inspect it. SAFE cans have smooth dents, dents that are not on the seams, dents that do not compromise can junctures.

DISCARD cans with dents on seams, dents where side and end meet, sharp dents, swelling or bulging, rust that does not wipe off If in doubt, throw it out.

Yes, they really can be dangerous. Reason is, the tiniest break in the seal can allow botulism in, which does not ned oxygen to grow. Botulism is toxic and fatal when ingested, or at best case, you're only a quadraplegic.

Avoid cans w/ dents on teh top or bottom rims, or on the side seam. If there is a dent opposite the side seam, and it doesn't affect any other seam (small dnet), it's fine. If it comprimises the seams leave it alone.

Dents could mean a break in the seal of the can allowing either bacteria to enter or bacteria already present to become more active and spoil the contents. Oxygen getting in even without presence of bateria can also spoil the contents.

Dented cans are OK as long as they are not punctured. However, bulged cans should be disposed of immediately as they have been contaminated and the interior contents have created the bulge from deterioration and could be a source of fatal botulism poisoning.

what we learned in culinary school is that food that in sold to us in a metal can is ok it keeps longer of course but that metal can is just that metal once you have a can that is dented it changes that malectural structure of the metal and it sends the change in the metal through your food now this may sound funny but by this process it's pudding bad things that our body can't process in food that we are to consume and may cause health problems and even "lock jaw" from botulism but these occurrences are not all that common but if you buy a can in the store and it has a dent I wouldn't buy it b/c you don't know how long it has been sitting there and mutating your food ~good luck~Chef Abbi

I have always heard that as long as the top or bottom of the can isn't swollen that it is o.k.
