Ham, turkey and cheese in julienne strips. Lettuce, 2 or 3 varieties. Sliced boiled eggs, julienned carrots, and chopped onion & radish.

red/green/orange pepper cut some lemons you could also chop mint or coriander and sprinkle it on top just for an extra fresh flavor. you could do some olives, but I don't think it meshes too well with all of the other ingredients. I would leave it alone or just add peppers to make it colorful and to keep it simple. that sounds yummy as it is, and you want to overpower your yummy pilau with a salad! Good Luck! : )
