Here are some recipes that I make many times during the year:

Chocolate Coconut Balls

60 servings 60 cookies 35 min 5 min prep

3 ounces unsweetened baking chocolate
1/4 cup butter
1/2 cup sweetened condensed milk
3/4 cup sugar
1/4 cup water
1 tablespoon light corn syrup
1 teaspoon vanilla extract
2 cups sweetened coconut flakes
1 cup chopped walnuts
1 cup powdered sugar

In a large, heavy, sauce pan over very low heat melt chocolate and butter, add condensed milk and remove from heat In a small sauce pan mix water, sugar and corn syrup, cook over medium heat, stirring constantly, until sugar is dissolved.
Continue cooking without stirring until mixture reaches 250 degrees (firm ball stage).
Remove from heat, stir into chocolate mixture, ad vanilla, coconut and walnuts.
Blend with a wooden spoon.
Refrigerate for about 30 minutes (or until firm enough to handle) Shape into 1?
balls, roll in powdered sugar.
Store in an airtight container in a cool, dry place.

Chocolate Coconut Macaroons

INGREDIENTS:
1 can (14 ounces) sweetened condensed milk
3 squares (3 ounces) unsweetened chocolate
1/4 teaspoon salt
8 ounces shredded coconut
1 teaspoon vanilla extract
PREPARATION:
Generously grease cookie sheet.
Combine condensed milk, chocolate, and salt in the top of a double boiler. Cook over boiling water, stirring frequently, until chocolate is melted and mixture is thick; remove from heat.

Add coconut and vanilla; stir to mix well. Drop by rounded tablespoons about 1 inch apart on prepared cookie sheet(s). Bake at 350° for 10 to 12 minutes, or until cookies are set. Remove chocolate macaroons from cookie sheets to wire rack to cool completely.
Makes 2 to 3 dozen chocolate coconut macaroons.

"Chocolate Coconut Candy"

Ingredients

3 cups sugar
1/4 teaspoon cream of tartar
1/2 cup plain chocolate, broken into small pieces
1/2 pint milk
1 tablespoon butter
1 teaspoon vanilla
2 tablespoons freshly grated coconut

- Put the sugar and milk in a heavy based saucepan.
- Bring to the boil, add the cream of tartar, and boil gently for 8 mins.
- Melt the butter and the chocolate and stir them in with the coconut.
- Bring to the boil again and boil for 2 minutes.
- Remove from the heat, stir in the vanilla, beat well for a minute or two, then turn into a well buttered tin or dish and cut in bars when cold.

------------AND, LASTLY...

Chocolate Coconut Candies

Amount Ingredient
3/4 cup mashed potatoes
16 ounce package confectioners' sugar
4 cups flaked coconut
1 teaspoon almond extract
Chocolate Coating:
2 tablespoons soft butter or margarine
2 tablespoons corn syrup
3 tablespoons water
1 package Betty Crocker chocolate fudge frosting mix

Mix all ingredients except Chocolate Coating. Drop mixture by heaping teaspoonfuls onto waxed paper. Roll into balls; chill 1/2 to 1 hour or until firm. If mixture is too soft to form balls, chill before shaping.

Prepare Chocolate Coating. Using tongs or forks, dip balls in coating, turning to coat evenly. (Keep coating over hot water while dipping balls.) Remove balls from coating and place on waxed paper or wire rack. Chill until firm. About 5 dozen candies.

*If instant mashed potatoes are used, prepare as directed on package for 2 servings; measure 3/4 cup.

Chocolate Coating: In top of double boiler, mix butter, corn syrup and water. Stir in frosting mix (dry) until smooth. Heat over rapidly boiling water 5 minutes, stirring occasionally.
