GOLUMPKIES (STUFFED CABBAGE)

3 1/2 - 4 lbs. ground beef
3 large heads green cabbage
1 - 1 1/2 lbs. long grain rice, cooked
7 onions fried to golden brown, diced
1 lb. bacon
48 oz. jar tomato sauce, water added
garlic or garlic powder to taste
salt and pepper to taste


Fill a large pot with salted water and bring to a full boil. Cook cabbage, covered, at medium heat for 15-20 minutes.
Peel leaves away carefully and stack them.

Put sauce in pan, add approximately 1/2 jar water or more if needed and cook very slowly over low heat.

Add garlic to sauce and season to your taste with salt and pepper.

Combine ground beef, rice, onions, eggs, salt and pepper together.

In large roasting pan, cover the bottom with a few the cabbage leaves.

Fill each of the cabbage leaves that you have with the mixture of ground beef, rice, onions, etc. Roll up each leaf, turning in sides to make a packet that is like an egg roll. Lay each one open side of leaf facing down on the bottom.

Place a layer of cabbage leaves on top of each layer to separate the layers, then layer again with more cabbage rolls. Continue until all ingredients are used.

Cut bacon and layer on top of each layer.

Pour sauce on top, only filling up half of the pot since the golumpkies will add liquid.

Sprinkle salt, pepper and garlic on top and bake at 300-325F about 2 1/2 to 3 hours, basting every hour, adding more sauce if required.

heres an old family recipe from poland.

Stuffed cabbage rolls

2lbs ground beef
chopped onions and chopped garlic ( you decide how much, its a taste thing)
Large can of stewed tomatoes

minute rice
salt and pepper to taste
1 tsp cinnamon
1 head of cabbage

Mix ground beef, onion, garlic cinnamon and salt and pepper togather in a large bowl then make meat balls out of it. remove core from cabbage and place in a pot of near boiling water. enough to cover the head of cabbage. as the leaves get limp pull them off then roll a meatball in the rice and wrap with a cabbage leaf and secure with a tooth pick. when you are out of meat chop up the remainder of the cabbage and put it in a large cooking pot. place the cabbage rolls ontop and cover with the can of stewed tomatoes. cook on low heat and after the juices start to boil cook for another 2 1/2 hours.

you may want to repeat this until you have 2-3 cabbage rolls for each person depending on the size of the cabbage rolls.

1 quart sauerkraut
46 ounces tomato juice
1 ounce vinegar
3 cloves
1 bay leaf
3 peppercorns
1 teaspoon sugar
1 head cabbage
2 lbs smoked sausage, cut in 3 inch pieces

Mix ground beef, ground pork, salt, rice, onion, black pepper, eggs and paprika all together.
Core cabbage and place in steamer till leaves are tender and able to be pulled off easily.
Peel off what you can and return to steamer till other leaves can be pulled off easily -- repeat till leave get small.
Stuff cabbage leaves with meat mixture till all meat is gone, judge amount by size of leaves.
Shred rest of cabbage into large roasting pan, add 1/2 jar of sauerkraut.
Put rolls ontop of cabbage and sauerkraut.
Top with the rest of the sauerkraut.
Add vinegar to Tomato Juice and pour over rolls add water to cover.
Add 3 cloves, 1 bay leaf, peppercorns and sprinkle with sugar.
Place sausage on top of rolls and cover and cook at 325 for 3 hours.
