PORK TENDERLOIN WITH ROASTED APPLES AND ONIONS
Serve with: Red-skinned potatoes roasted with thyme, and steamed green beans.

1 large pork tenderloin (about 14 ounces) 3 tablespoons olive oil, divided
2 tablespoons whole grain Dijon mustard
2 teaspoons fennel seeds
1 large onion, sliced
2 medium Granny Smith apples, peeled, cored, sliced 1/4 inch thick
1/2 cup dry white wine or apple cider
Preheat oven to 450°F. Season pork with salt and pepper.
Heat 2 tablespoons oil in large nonstick ovenproof skillet over medium-high heat. Add pork and sear until all sides are brown, turning occasionally, about 5 minutes. Transfer pork to plate. Cool slightly. Spread mustard over top and sides of pork; press fennel seeds into mustard. Add remaining 1 tablespoon oil to skillet. Add onion slices and apples; sauté over medium heat until golden, about 5 minutes. Spread evenly in skillet and sprinkle with salt and pepper. Place pork atop apple-onion mixture.
Transfer skillet to oven and roast until apple-onion mixture is soft and brown and meat thermometer inserted into center of pork registers 150°F, about 15 minutes. Transfer pork to platter and tent with foil. Let stand 5 minutes.
Meanwhile, pour white wine over apple-onion mixture in skillet. Stir mixture over high heat until slightly reduced, about 2 minutes. Cut pork on diagonal into 1/2-inch-thick slices. Spoon apple-onion mixture onto plates. Top with pork and serve.
Makes 4 servings.

I'm wanting to believe that it's pork loin and not tenderloin that you got. A 2 lbs tenderloin piece has to come from a hell of a big pig.
Nevertheless, if you sear the outside in a pan before you stick it into an oven at 350 F. I would pull it out in 30-40 minutes and just let it rest for another 10 minutes before slicing.

For your seasoned pork loin, preheat your oven to 400 degrees F or (200C). Place the seasoned pork in the preheated oven and immediately turn the oven down to 350F (175C). Roast the pork loin or tenderloin for about 70-90 minutes or until it reaches an internal temperature of 145-150F (73-75C) degrees. If you prefer your pork cooked to medium well, cook it to an internal temperature of 155-160F (78-80C) degrees. When the pork roast is done, remove it from the oven, tent with foil and let it rest for about 10 minutes before slicing. Resting allows the meat to redistribute its juices giving you a more moist and more evenly cooked roast. Works great with steaks also, but resting time would only be 3-5 minutes. I generally season then brown the pork tenderloin on the stove top burner. I then finish roasting it in a preheated 400F (200C) degree oven for about 25 minutes or until it reaches an internal temperature of 145-150F (73-75C). No longer do we have to cook pork until it is well done, pink is fine, according to the USDA, I believe you may have a boneless pork loin as the tenderloins usually weighs in at not more than a pound.

It will probably take about 45 minutes at 350 to 375 degrees. Get a thermometer and roast it till it reaches 165.

your oven should be at 325> cooking time would be approximately 30-35 mins. per pound. when done cooking insert a meat thermometer so tip is in the thickest part of the meat make sure that its not touching anything but the center of the meat to get the right temp which should read 170 on the thermometer..also you should let the meat rest for 15mins. so the juices will go back into the meat and it will be a lot easier to cut>>>good luck

If you use a meat thermometer it will be more accurate, cook the meat until it reaches 155 degrees farenheit, it would be approximately an hour.

I would say to cook it for about 45 minutes checking every so often.
