I would love any and all curry recipes that people have tried and enjoy, and specifically, any for curry pudding! I really enjoy trying new food, but don't have a good resource yet for knowing how to use curry, so help me out please!

SHRIMP CURRY

1 lb. cooked shrimp
1 can condensed mushroom soup
1/4 c. seedless raisins
1 lg. onion, finely chopped
2 tbsp. butter
1/4 each tsp. salt and pepper
2 tsp. curry powder
1/4 c. sour cream
dash of tabasco
lemon juice, to season

Sauté the finely chopped onion and 2 tbsp. butter. When onion has browned, add condensed mushroom soup and curry powder (mixed to paste).
Add shrimp, seedless raisins, and heat thoroughly. Season with salt and pepper.

Stir in sour cream, a few drops of lemon juice, and a dash of tabasco.

Serve over hot rice

CURRY CHICKEN

1 lb chicken, cut into chunks
1 cup water chestnuts
1 cup baby corn
1 cup bean sprouts
1 cup diced potato or apple
2 1/2 cups coconut milk
2 teaspoons red curry paste
3 cups Jasmine rice

Cut chicken into chunks (about walnut-sized). Add coconut milk, baby corn, water chestnuts, bean sprouts, and potatoes to a large cooking pot.
Stir in curry paste and chicken. In a separate pot, boil rice. Cook curry for 10-15 mintues, stirring occasionally.

Let sit 3-5 minutes, then serve over rice.

Also good with popadums.

SPICY CORN CURRY (MAKAI KI KARHI)

2 cups corn
juice of 1/2 lemon (nimbu)
2 cinnamon sticks (dal cheeni)
2 cloves (loung)
2 small cardamoms (choti ilaichi)
salt (to taste)
ingredients for paste
1 medium onion
5 green chiles (or to taste)
1tbsp. fresh coconut (grated)
7 cloves of garlic (lehsan)
4 tsp. poppy seeds (khash khash) (optional)
1 bunch of cilantro/coriander leaves

Grind all the paste ingredients together into a fine thick paste.
In a large pan, heat the oil and fry the paste for about 2 minutes. Add the cinnamon sticks, cloves and cardamoms and fry for another 2 minutes. Then add the lemon juice and mix well. Add the corn, milk, and salt.

Mix well and cook for another 15 to 20 minutes. Serve.
