I work in a bakery and we buy sacks of frozen sliced apples for our apple pies. They aren't treated with anything and they aren't brown.. I would core and slice and put in a freezer container and freeze. Even if they do turn a little brown they turn brown when you bake them anyway.

Yes you can I have a bunch in the freezer now. peel and slice them all and put in a ziplock bag, for a quart bag I put 2 tablespoons of sugar and shake it well. They still turn a little brown but not bad, and when cooking with them they are great like this. Took some out earlier to make apple dumplins tomorrow.

Yes you can. But you should put powdered citric acid or lemon juice on them to keep them from going brown from oxidation.

Let me suggest another idea. Prepare them in an apple pie format - crust, apples, seasonings and topping. Then wrap the unbaked pie in freezer wrap instead of baking it. Put it in the freezer. Then when your family again wishes that they had an apple pie, pop that into the oven and bake it through. Result is a fast apple pie for people who are really craving one. In fact live it up and make a few for the freezer.
