The usual saying is Fair Fat and Forty. But with the fatty diets people eat these days its not unusal to see them in the late 20s!

I have read in a medical journal somewhere before that there was a 13 year-old with gallstones before and had to have the gall bladder removed. That is the youngest I have heard.

I have seen it in a sixteen year old female. Not uncommon after mid 20s.

Interestingly gallstones come about as a result of cholesterol crystals, which precipitate in the mucosa (lining) of the gallbladder, then become large enough to break off and be in the lumen.

The biggest risk factor is not diet, it is who you picked as ancestors. There are some native American tribes in which it approaches 100% of the people by adulthood. The association between obesity and gallstones is not a direct one.
