I just opened a can of chilli, and as I put the can opener to it, it sounded like air hissed out. I'm not going to die of botulism if I eat it, will I?

Yikes, what you can be sure of:

1. Air does NOT hiss out. It can only hiss in.
2. A "taste" as one reply mentioned, is all it would take to get sick.
3. Is it worth taking the risk?
4. How does it smell?

Sorry but air didn't come out.....It sucked IN!!!

All canned foods are heat-sterilized and packed and SEALED when hot.....The can cools and a Vacuum is formed inside the can.....that stops bacterial growth.

You ever done Home Canning with Mason Jars and Lids??

Same concept.....

THE REAL WARNING is....if you find a "bloated" can. That is a contaminated can.....but there would be obvious signs associated with it.....BAD SMELLING CONTENTS for one....

An obvious leak somewhere on the can itself would stop you from even purchasing that can at the store....so by process of elimination you end up with good food in your cupboard....

no, you should be okay.. canned foods should have a slight indent in the lid and because it is vacuum sealed, will suck air into the can the moment it's opened... if the lid appears to have a "bubble" under it, you should toss the can - that usually indicates bacteria is growing and creating gasses within the can. The cans that have "expanded" will not hiss when opened.

Did the air hiss out or did it hiss in? Next time dive to the bottom of the pool with a can opener and a can, open the can there and listen for the hiss.

No, a little air should hiss out. The chili is pressurized inside the can.

Air is SUPPOSED to be released. My mom used to do home canning and if the jar didn't hiss when she opened it she threw it out because it means that it is bad.

Actually, what you heard was air rushing in. The vacuum seal is what keeps the bacteria from growing. It is perfectly fine.

if it was vacuum packed can you may have heard air hissing IN, but just to be safe blow the two bucks on a new can of chili and save yourself the torture

Taste a small bit of it and if it tastes odd throw it away. Also check the experation date.
