and the middle looks soft set. Is it done?

Yes, because when you remove it from the oven, it will continue cooking for a few minutes, so the middle will be done. If you wait until it completely cooks through, it will be overdone by the time you're ready to eat.

My rule of thumb... if the middle jiggles/wobbles like jello, it still has a few minutes in the oven. If it jiggles only a little bit (like jello with half the water), then it's time to take it out.

I'b say if its soft set and a toothpick or butter knife comes out clean its done.

Stick a toothpick in it, pull it out. if its clean, its done. if it has stuff stuck to it, it need a bit longer.
