i'm a big soup fan. i just start with cambells chicken noodle or something, then chop up some vegi's and throw it in to add more nutrients and calories for that matter. i usuall buy pre-cooked whole chicken and de-bone it and have it in the fridge (i make a lot of quick meals so it makes it extra to easy to have chicken pre-cooked) - so then i add some chicken breast to the soup as well.
It's quick, simple, and healthy.

I take a tortilla, turkey, and cheese. Roll it up along with a slice of lettuce and put some cream cheese with chives in it. YUM! Quick, easy, and filling.
