I baked a chicken brest in a dish with rice and cream of chicken and I think I put in too much rice. It's very thick--The texture is alot like stuffing...It's tastey, but is there anything I can add to it that would make it moist? Right now it's very dry.

I believe you're looking for the consistency of Risotto, sort of creamy, add a bit of cream or milk while it's over the fire and stir, it should break down, if you don't have milk use a chicken broth, but what will happen is the leftovers will sog out because of the added liquid, but will be fine right then.

Your recipie sounds similar to mine. If you used condensed cream of chicken soup (like Campbell's), and did not add liquid, it will result in a very thick mix. Not so tasty. Add chicken stock to make the dish more moist.

I use one 10.75 oz can of Cambell's cream of chicken soup and add about 1/2 c of chicken stock. To save on clean-up, measure the stock in the empty soup can by filling it almost half way. I like the stock that comes in the yellow box, but you can also use milk, or water if you're in a real pantry bind. I find the chicken stock tastes best. Milk makes a more creamy dish.

Then I add Minute Rice. Again, I use the empty soup can to measure. I fill it up the can one time with the rice, then I mix everything together and bake.

You're the one whose going to eat it, so you can adjust the amounts until you find the proportions you like best.

Add Liquid: Chicken stock will give it more flavor than water but use the water to dilute the strength of the taste of the cream of chicken soup. Next time, just saute the raw chicken breasts in a little butter or xv olive oil and add 1 clove garlic and 1/2 diced shallot or green onions. then remove cooked chicken to platter and with the drippings in that pan, add 1 cup of chicken stock & your favorite seasonings; IE... turmeric,curry, oregano,rosemary, thyme, parsley, or what ever you like. ( if you want it creamy then add 3 Tablespoons of milk or cream. ) Then, cook it down to a sauce-like state. Pour over chicken and rice. Make your rice SEPARATELY. That way you won't get "goo"! Put everything together and voila!!! Bon Appetite!

here is what I do...take chicken breasts and layer in casserole dish..then I sprinkle rice all over the chicken...I used a can of chicken broth and cut up broccolli and bake. Cover with foil and usually takes about 45 mins. Dont forget the seasonings. Turns out very tender and juicy and the rice asborbs the broth....sprinkle with shredded cheese and serve a green salad. Good Luck.
PS- I cook at 375

You should add about 1/2 can of milk to the mixture before baking. Also, don't use too large of a casserole dish for smaller servings - it makes the juice spread too thin so the rice is thick & clumpy.....

You could try poaching the chicken breasts in chicken broth, then cooking the rice with that instead of water.

my mom always adds some chicken broth it tastes good and makes it moist

Try adding a little bit more soup, if you have any. If not, cream of mushroom will work.

If that doesn't work, metl a tablespoon of butter and poor over rice, then stir it in.
