I am looking for Christmas cookie recipes that are different. I want something other than chocolate chip, oatmeal raisin. peanut butter or sugar cookies. I am looking for something different. Can you you share some of your favorites with me?

sorry if this doesn't sound appealing to you...but everyone that has tried them, for me, has liked them...

get Ritz crackers...put peanut butter in the middle and make little sandwiches

get some Bakers chocolate (it comes in big blocks) melt it in the microwave ( very carefully!! if it gets too hot it will burn...make sure you stir it when it starts to melt)

dip the Ritz sandwiches in the chocolate and lay them out on wax paper (or tin foil or whatever you have handy) to cool and harden.

its cheap...its easy...and they are GOOD!!

The simplest cookie "recipe" I've found (which requires no machinery!) is this: 1) Buy a tube of Christmas Cookie Dough with the built-in Reindeer Faces and/or Christmas Trees; 2) Slice off slices and place on cookie sheet; 3) Bake; 4) EAT!! This doesn't help you with your Kitchen Aid dilemma... but the cookies are EASY and GOOD! :)

Here's our favorite cookie in the world and it's only got afew ingredients and is very quick to make. No fuss.
Coconut Cookies

3 c coconut (something moist like mounds brand)
1/4 c flour
2 eggs
1 c sugar
1/2 tsp vanilla
1/2 tsp lemon juice

Just plop it all in a bowl. Stir till it's well blended. Drop on greased sheets. (For C-mas I put a red hot candy in the center of each before baking) Bake 350 for 17 mins, till they're alittle browned around the edges.

I bring these to church too and I hear strangers saying, "Oh my gosh, these are so good! Who made them?" Just be sure to get them off the sheet as quickly as possible and pam spray your spatchula. These are chewy and delicious.

Yeast Crisps


Very thin, rustic-looking sugar cookies that are wonderfully flakey and light.

1 packet yeast
1/3 cup warm water
1 cup margarine, softened
1/8 teaspoon salt
2 cups flour
1 cup sugar
Put warm water in a small bowl and stir the yeast into the water. Set aside. Mix together margarine, salt and flour. Stir in yeast and water until well blended. Chill for 1 hour. Put the sugar in a small bowl. Form 1-inch diameter balls of dough and roll them in the sugar. Place the balls in a shallow pan and chill for 30 minutes. Preheat oven to 350°F. Line cookie sheets with parchment paper. Dust a work surface and rolling pin with a mixture of flour and sugar for rolling out the cookies. One by one, place each ball on the work surface and press it flat with the ball of your hand. Turn it over and press again. This coats the ball with some flour and sugar to keep it from sticking. Roll out the dough very thin, about 1/16 inch or less, or until the dough makes a rectangle about 3”x2”, then cut in half crosswise. Pick up the very thin dough with a sharp wide knife such as a chef’s knife and place it on your prepared cookie sheet. Let rest for 30 seconds then bake for 6-8 minutes or until crisps are golden brown. Remove from oven and let cool one minute. Remove crisps to a wire rack to cool completely. Store in an airtight container in the refrigerator for up to 2 weeks. Makes about 100 crisps.

Gingerbread is very good around this time. Have you ever had pumpkin cookies?? Those are delicious! also I love Chocolate with white chocolate chips. I also like white chip macadameia nut.

Here are three Christmas cookie recipes. The Date Nut Bars are quickest, the Date Pinwheel cookies are prettiest, but my favorite is the Molasses Spice cookie recipe!

Molasses Spice Cookies

¾ cup shortening, melted
1 cup sugar
¼ cup molasses
1 egg
2 tsp baking soda
2 cups flour
½ tsp ginger
½ tsp cloves
1 tsp cinnamon
½ tsp salt
sugar

Add sugar, molasses, and egg to cooled shortening and beat well. Sift flour, soda, salt, and spices together and add to the first mixture. Mix well and chill 2 hours or overnight. Form dough into 1” balls and roll in sugar. Place on greased cookie sheet. Bake at 375 degrees for 10 minutes.

Date-Nut Bars

¾ c. sifted, all-purpose flour
1 c. sugar
¼ t. baking powder
1/8 t. salt
½ c. corn oil
2 eggs
½ t. vanilla
1 c. (8 oz. pkg.) chopped dates
1 c. chopped nuts
powdered sugar

Mix and sift first four ingredients. Make a well and, in order, add oil, eggs, and vanilla. Beat until smooth. Add dates and nuts. Mix well. Turn into greased 10” x 8” baking dish. Bake in moderate oven (350 degrees, or 325 degrees for a glass dish), 35 to 40 minutes. Cut into bars while warm. Dust with powdered sugar. May be prepared ahead. Makes 30 bars.

Date Pinwheel Cookies

½ cup shortening
1 cup firmly packed dark brown sugar
1 egg
2 cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
1 teaspoon ground cinnamon
Filling (recipe follows)

Cream shortening; gradually add sugar, beating well at medium speed of an electric mixer. Add egg, and beat well. Combine flour, soda, salt, and cinnamon; gradually add to creamed mixture, mixing well. Shape dough into a ball. (Dough will be stiff).

Place dough on a lightly floured surface; roll into a 16- x 8-inch rectangle. Spread filling over dough, leaving a ½-inch margin on all sides. Starting at long side, carefully roll dough, jellyroll fashion; pinch seam and ends of roll to seal. Wrap dough in wax paper, and chill at least 1 hour.

Unwrap roll, and cut into ¼-inch slices. Place 1 inch apart on greased cookie sheets. Bake at 350 degrees for 12 to 15 minutes. Cool on wire racks.

Yield: about 4 dozen. (mine are thicker than ¼ inch, so I only get about 2 dozen).

Filling

1 (8-ounce) package whole pitted dates, chopped
½ cup sugar
¼ cup water
1 cup finely chopped pecans

Combine dates, sugar, and water in a medium saucepan. Cook over medium heat 3 to 5 minutes or until thickened, stirring constantly. Remove filling from heat; stir in pecans. Let cool.

Yield: about 1 ¾ cups.
