Go to someplace like PetSmart. or Petco. Look at the different foods. Compare labels. Find something that does not have corn in the top 5 ingredients. Try Wellness, Innova, Royal Canin.....which I think has a food FOR GSD's!!!! Try a small bag to see if it agrees with your dog. Some GSD's are prone to digestive problems, so watch for those.
I have no idea what you were feeding before either.

Wysong, Wellness, Candiae, Innova, Solid Gold, california natural, something along those lines is a good food. As for the shedding. Get a shedding blade and use that.
GSD shed a fair bit and most do it year round. A shed blade works well to pull the dead hair out and you will have less shedding if you keep the dead out of the coat on a regular basis.

I personally don't care for Royal Canin because of it's high corn content. Fillers and low quality ingredients can add to shedding issues. However, I do agree that brands like Wysong, Wellness, Innova, Evo, Canidae, Merrick, Natural Balance (make sure it's Natural BALANCE), Solid Gold, and even Blue Buffalo can help make a dog's coat healthier.
Those who don't know what a GSD is, shouldn't even answer this question.
A high quality diet along with regular grooming can help reduce the tendency to shed heavily.
Also, make sure that any switch is gradual. My local pet supply store gives out free sample bags to make sure that dogs with sensitive tummies are ok. : )

This time of year dogs shed a lot. Daily brushing helps a lot. Most of the time the dog will shed year round because of the coat. A good quality dog food will help also. I feed Flint River Ranch and am very happy with it. Coats are shiny and they are healthy Boxers but they do shed in the fall and spring.
Brushing from nape of neck to base of tail and then brushing from base of tail to nape of neck (called back brushing) works wonders.
