I don't have the recipe since I usually just 'ad lib' when I cook, but when I make cauliflower and cheese, I steam or boil the cauliflower, and then put a little mustard in with some mayo (about 2 tbsp with maybe a 1/2 cup of mayo?) and then add atleast a cup of grated cheese and slather the entire thing with the mixture and put the cauliflower in the oven until the cheese melts. Very tasty, my kids love it.

Cauliflower Cheese Pie
This cauliflower cheese pie is made with a delicious potato crust.

2 cups shredded potatoes
1/4 cup grated onion
1 egg, beaten
1 teaspoon salt
1 tablespoon all-purpose flour
1 1/2 tablespoons olive oil
1 tablespoon vegetable oil
1 onion, chopped
2 cloves garlic, minced
salt and pepper to taste
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1 head cauliflower, coarsely chopped
1 1/2 cups shredded Cheddar cheese
2 eggs, beaten
1/4 cup milk
1/4 teaspoon paprika

Preheat oven to 400 degrees F (200 degrees C). Grease a shallow 9 inch baking dish or pie pan.

To make crust: Use a cheese cloth to squeeze extra liquid from the grated potatoes. In a medium size mixing bowl, combine potato, onion, egg, salt and flour. Transfer the mixture to the prepared pie pan, and pat it down with a rubber spatula or your fingertips. Bake for 30 minutes. Brush the crust with oil, and bake for another 10 minutes. Remove crust from oven, and reduce the oven's temperature to 350 degrees F (175 degrees C).

To make the filling: In a large frying pan over a high heat, heat the oil until hot. Reduce the temperature to medium and saute onion, garlic, thyme, salt, pepper and paprika in the hot oil; cook for 8 to 10 minutes. Stir the cauliflower into the pan and cook for 15 minutes.

Spread 1/2 of the cheese onto the potato crust. Spoon the vegetables on top of the cheese. Sprinkle the remaining cheese over the sauteed vegetables. Beat the milk and eggs together in a small bowl, and then pour over the vegetables and cheese. Sprinkle paprika over the mixture.

Bake for 35 to 40 minutes, or until the custard is set and the top of the pie is slightly browned.

I always put a pinch of nutmeg into the cheese sauce, and then sprinke parmesan cheese on top of the whole thing when in the dish before you put it in the oven to bubble. Bacon bits are nice to add too. Or you could crush up a bag of Cheese n onion crisps, mix it up with cheddar cheese and sprinkle that on the top.

Add mustard and/or chopped onions to the cheese sauce, then sprinkle a different stronger cheese on the top, such as Stilton or Parmesan.

If it's not for vegetarians add some chopped bacon

The key for my Dad was always adding strong cheddar - Lincolnshire poacher or Montgomery - to the sauce and make sure it tastes cheesy before you run it over the cauliflower. Then make sure you cook it long enough to get the cheese crust to brown off.

Add crumbled crisply grilled bacon and some fried onions to the cheese, or if for a vegetarian, use those 'baco bits' suitable for veggies - add half a teaspoonful of dry mustard powder to the cheese sauce, and sprinkle with worcestershire sauce when cooked - yummy

CAULIFLOWER WITH ZESTY CHEESE SAUCE

1 tablespoon butter
1/2 small onion, chopped
1/4 cup all-purpose flour
2 cups milk, heated
1 head cauliflower, cut in pieces
1 cup shredded monterey jack cheese or havarti cheese
1/2 teaspoon salt
1 tablespoon fresh chives (chopped) (optional) or red chili pepper flakes (optional)

Melt butter in saucepan over medium heat.
Cook onion for 3 minute until softened.
Sprinkle with flour and cook for 1 minute.
Gradually add milk and bring to simmer stirring constantly.
Simmer for 5 minutes or until thickened DO NOT BOIL.
Cook cauliflower in boiling salted water until tender and drain well.
Remove saucepan from heat and stir in cheese and salt and stir until cheese is melted.
Pour over cauliflower to serve and sprinkle with chives or flakes if using.

whenever my mum makes me cauliflower cheese she always uses a stronger cheese and then in the cheese sauce she adds a good tea spoon of mustard and a good squeeze of lemon juice and it tastes lovely and no salt is needed as the cheese gives u all the taste u need

use a cup of green peas when you cook the cauliflower, in the same water. when assembling it for the oven layer with chopped ham or sliced tomato and after the cheese sauce, sprinkle with grated parmesan and fine breadcrumbs, dot with a little butter, dust with a little paprika over the slices of tomato it adds a piquancy.
