Condensed milk, mixed one to one with water, perhaps half and half or sour cream mixed the same way. Yogurt mixed with water. A great substitute (non-lactic) is almond milk - you throw 4 parts water, one part peeled almonds into the blender for a few minutes at "high" then strain. Its delicious and non-lactic! (Soy protein is not all that good for you I am hearing...)
But I suspect our friend is in somewhat a hurry for the pancakes so try the above suggestions if you have the ingredients......

HONEY - APPLE PANCAKES - MILK FREE
1 1/4 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. apple pie spice
1/8 tsp. baking soda
1 egg, beaten
3/4 c. apple juice
2 tbsp. honey
1 tbsp. oil
In a medium bowl stir together flour, baking powder, salt, apple pie spice, and baking soda. In a small bowl stir together egg, apple juice, honey, and oil; add all at once to flour mixture, stirring until blended but still slightly lumpy.
Cook on a hot, lightly greased griddle. May be mixed ahead
Use this one as your base recipe and experiment with some of your own ideas.

if it is a premix that calls for milk you can use wate i do it all the time. if you r making from scrtch use soy milk, rice milk,or coconut milk.
