to all you uncultured people out there. the mould is supposed to be there that is how it is made and they are delicious u should get out more and try new things. i simple wanted to know if u ate the skin. thanks to the chef good answer

what you have is sech which is a french air dried sausage (made useing the same prosess and parma ham),the skin is natrual and edible but it does take some getting used to.
in spain they have chirizo which has a high content of paprika.
so to answer your question yes but you might not like it.

Thank you for asking this question. I've never thought to do so, and have steered clear of these sausages when the continental market has passed through Stratford. I may actually give them a go next time. I'm not a food prude by any means, just didn't know what to do with them.

i would take the mould off. i wouldn't eat the skin either.

I usually remove the skin then slice them and make a sandwich
