Praline Pecans
Makes About 4 Cups
2 cups sugar
1 cup buttermilk
1 teaspoon baking soda
2 tablespoons butter
4 to 4 1/2 cups pecan halves
In large (at least 6-quart) heavy saucepan, cook sugar, buttermilk, and soda on medium-high heat to soft-ball candy stage. (Syrup has reached the soft-ball stage at 234 to 240 degrees. When a small quantity is dropped in ice water, it forms a ball that keeps its shape, but when removed from the water, it flattens out by itself). Stir frequently to prevent burning. As candy cooks, it will turn golden brown. Remove from heat, and stir butter in . Add pecans, and stir to coat all nuts. Cover counter with wax paper, and pour pecans onto it. Immediately separate pecans. Let cool.
Note: Works best when made on a day with low humidity.

The quicket way is on the stovetop, but you can also bake them. If you bake them, you'll have to watch them and stir a few times.
Throw the nuts in with butter, sugar, and a dash of salt (1/2 stick butter to 1 cup sugar; would do probably 2 cups of nuts). Heat on medium until they caramelize. You can add various other spices per your preference: cinnamon, nutmeg, cayenne pepper...depending on what you're using them for.
(This is for the hard kind, not "pecan pralines," the chewy candies.)

"Southern Pralines" - 1 1/2 dozen
1 cup granulated sugar
1 cup brown sugar (packed)
1/2 light cream (20%)
1/4 tsp. salt
2 tbsp. butter or margarine
1 cup pecan halves
Lightly butter a sheet of aluminum foil. Combine sugars, cream and salt in large saucepan. Cook over medium heat, stirring constantly, to 228* on candy thermometer (or until mixture spins a thread about 2" long when dropped from a spoon).
Stir in butter and pecans. Continue cooking, stirring constantly, to 236* (or until small amount of mixture dropped into very cold water forms a soft ball which flattens when removed from water). Remove from heat; cool 5 minutes.
Beat mixture with wooden spoon until slightly thickened and candy just coats nuts but does not lose its gloss. Drop candy by large spoonfuls onto buttered foil.
