I used to buy 50 pound bags of potatoes and keep them in a cool dry place in my garage and they last for a good three to four months. Any that do start to rot just get discarded and I did the same thing with 50 pound bags of onions too. A great way to keep down food costs in a large family.Dis the same with various squashes too.

Place in a well ventilated box or basket and store in a dark, cool (around 40°F works best), moist area with good ventilation. Do not refrigerate and do not store in plastic bags. If potatoes are harvested from your garden, they must be cured by setting in a warm, dark place for about one week before storing them. This will help toughen the skins and store longer. 2 to 4 months

they are good till they become soft. BUT HERES A SECERT TO POTATOES. do not place them near thee onions, they will cause each other to mauture alot faster, if left in the same bin. and potatoes kepped in the fridge will keep longer and onions keeted on the counter will not sspoil near as fast.

i dig my potatos up in about sept and as long as i keep themm in a cool dark place they will last until about feb. now if you notice that some are starting to grow than peel em boil em mash em and freeze em

They are still good untill they turn soft or discolored, even if they grow eyes you just cut them off.
