I leave a half in the fridge overnight to dry it a bit, then put it in a ziplock and squish the air out before sealing. I can get about 10 days out of it, which is plenty of time to use it up.

I keep my peppers I use for salad in a plastic bag (make sure all the air is out) for about 3 days. I buy peppers when they are on sale to use in other recipes, like chili. I chop them up and freeze them.

cut them up, put in freezer bags and freeze - great for adding to dishes for seasoning when you are cooking.

Peppers are among the easiest of vegetables to freeze. Most peppers such as sweet bell or jalapeno need not be cooked or blanched prior to freezing. Simply wash, slice open and remove seeds. They may be cut into strips, chopped or diced and placed in a freezer container. Once thawed the peppers will be soft but well-suited for use in soups, stews or cooked vegetable dishes.

Either freeze left over pepper, great for cooking with,or store in olive oil.I find they are better kept in a cool place in sealed bag rather than in the fridge though

What you're doing wrong is throwing the whole half away. Just cut of the slimy part; nothing wrong with the rest.

OK...my wife discovered this and it really works on ALL vegetables. Just put your veg, used or otherwise, in an airtight plastic box with a sheet of kitchen roll on the bottom and it will stay fresh for weeks. Guaranteed !!

I'm not sure what kind of peppers you are talking about, but when I find bell peppers on sale or are very cheap, I slice them and freeze them. It works well.

I found that if you clean them take out all the seeds, wash and then dry then thoroughly and wrap them in cling film they should be good for a least 4-5 days.

wrap it up in cling filmand make sure you use it up in the next two days or so or the edges will go slimy and soft although you can always cut the edges but it's always better to use it all up! hope i've helped!

I put my veggies in a storage container filled w/water and keep it in my vegetable crisper in the fridge. They keep for about a week.
