Smoked Salmon and Goat Cheese Quiche

1/2 x recipe Basic Pie Crust Dough, see recipe
1 1/2 cup grated Parmesan cheese
1/3 lb smoked salmon
3 x green onions, chopped
8 x eggs
8 oz cream cheese, softened
2 oz goat cheese
1 1/2 cup evaporated milk
1/2 tsp freshly ground pepper
2 tbl chopped fresh basil

Line a 10-inch pie plate with the pie pastry, trimming and fluting the edge. Bake at 350 degrees for 5 minutes or until partially baked.
Sprinkle with half the Parmesan cheese. Layer with the salmon and green onions.
Beat the eggs, cream cheese and goat cheese in a mixer bowl until smooth.
Add the evaporated milk and pepper, beating well.
Pour over the layers. Sprinkle with the remaining Parmesan cheese and the basil.
Bake at 350 degrees for 1 hour or until a knife inserted in the center comes out clean. Cool for 15 minutes before serving

Red Beans and Rice

The original Popeye's clone recipe that I branched off of had 2 lbs of ham hocks and their fat renderings so I modified it with 2 strips of bacon, smoked ham and liquid smoke instead.
Makes 2 large servings (we like it so much I double the recipe and freeze the rest)

2 15 oz cans of red beans (kidney will do if you can't find red)
2 strips of bacon
1 lb of smoked ham
1/4 c each onion, red pepper, green pepper
1/2 c. water
1/2 to 1 tsp brown sugar
1 clove pressed garlic
1/8 tsp pepper
1/4 tsp cumin
Dash of Worcestershire
Cayenne, Tabasco, and liquid smoke to taste

2 cups cooked brown rice

In a pot sauté the bacon, garlic, peppers and onion, add the rest and simmer for 20 min, smashing some of the beans against the side with a spoon to make it kinda creamy.

Serve the beans in a bowl with cooked rice on top

Chicken Parisienne

6 boneless chicken breast halves
1 can cream of mushroom soup (I use Healthy Request)
1 small container sliced baby portabellas
1 cup sour cream (I use fat free or fat free plain yogurt)
1 cup sherry (not dry and not cream- the other one ;-)
1 T paprika

1) Preheat oven to 350
2) Sauté mushrooms in sherry, reserve liquid
3) Place chicken in a baking dish, mix all other ingredients
in bowl and pour over chicken. Sprinkle more paprika
on top.
4) Bake for one hour

Serve over rice or noodles

its a potato salad except u add bacon to the salad that is crumbled up into it

i like roasted chicken preseasoned with pepper salt paprika red pepper flakes and garlic and parsley then cook in oven for an hour till crispy and while u have it in the oven it will be on a rack over a pan and let fat drip off then let cook for an hour serve with
garlic cheddar mashed potatoes like
mash ur potatoes add garlic sour cream flavor and also mash in some cheddar cheese till well blended and mashed together
also make a can of peas for dinner this is tasty and wholesome and filling for a family or urself

I love a cheese steak for lunch with
sauteed onions that are crystalized and browned in a pan
leave to side and cook up some steak-ums till brown on both sides put slices of velveeta on top and fold the meat and let cheese start to melt take off pan and add to an italian roll untill full and add ketchup and onions on top serve with oven cooked french fries or deep fry them or even serve with onion rings fried or oven cooked

Hot dogs are always good too with bush or B&M baked beans on the side serve on potato buns or regular buns and make fried french fries or tater tots for the side

Barbecue Chicken Pizza

1 1/2 cups baking mix
1/4 cup hot water
1 tbsp, vegetable oil
1 1/2 cups cooked chicken breast chopped, or stripped
1/2 cup diced red pepper
1/4 cup chopped green onions
1 cup honey BBQ sauce
1 1/2 cups shredded mozzarella cheese

Heat oven to 450. In medium-sized mixing bowl mix baking mix hot water and vegetable oil until a soft dough forms. Beat dough about 20 strokes. Let dough stand for 8 minutes. Mean while, in separate bowl, combine cooked chicken breast,red pepper, green onion, and barbecue sauce. Grease cookie sheet or 12 inch pizza pan .Using hands dipped in baking mix, press dough into 13 inch circle on cookie sheet pinching up edges 1/2 or press into pizza pan. spoon BBQ Sauce chicken mixture onto dough and top with cheese. Place in oven on lowest rack and bake for 12 and 15 minutes.Serves 4-6. Refrigerate any leftovers

My mom used to make, (and now we do) a dish called chicken-rice-casserole.

You take a few boneless, skinless chicken breasts, cleaned up of fat and leftover junk, slice each breast into 3 strips.

In a large oven safe casserole dish, mix 3 cans of condensed soup, 1 each of cream of chicken, cream of mushroom, and cream of celery. Use a 1/4 can of water in each can to rinse it out.

Mix well, add 1 cup of uncooked converted rice, stir.

Add chicken.

Bake 350 for 2 hours.

"Hot German Potato Salad" - 5 or 6 servings

3 lbs. potatoes (about 9 medium)
6 slices bacon
3/4 cup chopped onion
2 tbsp. flour
2 tbsp. sugar
2 tsp. salt
1/2 tsp. celery seed
Dash pepper
3/4 cup water
1/3 cup vinegar

Wash potatoes; pare thinly and remove eyes. Heat 1" salted water (1/2 tsp. salt to 1 cup water) to boiling. Add potatoes. Cover tightly; heat to boiling and cook 30-35 minutes or until tender. Drain; set aside.
In large skillet, fry bacon until crisp; remove and drain. Cook and stir onion in bacon drippings until tender and golden brown. Stir in flour, sugar, salt, celery seed and pepper. Cook over low heat, stirring until bubbly. Remove from heat; stir in water and vinegar. Heat to boiling, stirring constantly. Boil and stir 1 minute.
Crumble bacon. Thinly slice potatoes. Carefully stir bacon and potatoes into hot mixture. Heat through, stirring lightly to coat potato slices.

this is one of my families favorite lunches..
Calypso Club Sandwich Ring
Ingredients:
2 packages (11 ounces each) refrigerated French bread dough
1 egg white, lightly beaten
1/2 teaspoon sesame seeds
1/3 cup reduced-fat mayonnaise
1 tablespoon Dijon mustard
2 teaspoons honey
1 medium red bell pepper, thinly sliced

1 medium green bell pepper, thinly sliced
1 small red onion, thinly sliced
2 cups thinly sliced iceberg lettuce
2 cans (8 ounces each) pineapple slices in juice, drained
6 ounces thinly sliced 96% fat-free deli smoked ham
4 ounces thinly sliced reduced-fat Swiss cheese


Directions:
1.Preheat oven to 350°F. Place bread dough, seam side down, on Large Round Stone. Join ends of dough together to form one large ring. Using Serrated Bread Knife, make eight diagonal cuts, 1/2 inch deep, on top of dough.
2.Brush egg white over dough using Pastry Brush; sprinkle with sesame seeds. Bake 26-30 minutes or until deep golden brown. Immediately remove bread to Stackable Cooling Rack; cool completely.
3.Combine mayonnaise, mustard and honey in Small Batter Bowl; mix until well blended. Using Ultimate Slice & Grate fitted with v-shaped blade, slice bell peppers and onion. Thinly slice lettuce using Chef's Knife.
4.To assemble sandwich, cut bread in half horizontally using Serrated Bread Knife. Place bottom half of bread on large serving platter. Spread half of the mayonnaise mixture over cut side of bottom half of bread; top with pineapple slices. Arrange ham and cheese evenly over pineapple; layer with half of the bell pepper slices. Top with lettuce, remaining bell pepper slices and onion slices. Spread remaining mayonnaise mixture over cut side of bread top; place over bottom half. Cut into wedges.

Chiles Rellenos Chicken

2 boneless, skinless chicken breasts
1 lime, cut in half crosswise
1 egg white
1 garlic clove, pressed
½ cup finely crushed nacho cheese flavored tortilla chips (about 1 ½ cup chips)
½ can (4 oz) whole green chiles, drained and cut into strips
2 Tbsp shredded Monterey Jack cheese
1 tsp snipped fresh cilantro
Prepared salsa (optional)

1.Preheat oven to 400 degrees. Spray small bar pan with nonstick cooking spray. Rinse chicken and pat dry with paper towels. Place one chicken breast half in resealable plastic food storage bag; seal bag. Lightly flatten chicken to even thickness using Meat Tenderizer. Repeat with remaining chicken breast half.
2.Juice lime halves into small batter bowl using Citrus Press. Add egg white and garlic pressed with Garlic Press.; whisk until frothy using Stainless Whisk.
3.Place Tortilla chips in another resealable food storage bag and finely crush using the flat side of the Meat Tenderizer. Place crushed chips in a shallow dish. Dip chicken in the egg mixture and then into chips coating completely. Discard remaining chips. Place chicken on pan.
4.Bake 20-22 minutes ir until chicken is no longer pink and juices run clear. Arrange chile strips over chicken; sprinkle with cheese. Bake 2-3 or just until cheese melts. Remove from oven. Sprinkle with cilantro. Serve with salsa, if desired.

Yield: 2 servings
