I'm not sure whether you have GF flours where you live, but we have a lot of brands that sell GF bread/ cake flours and a GF gluten-substitute to keep your cakes from flopping. You can buy GF flours online now, so if it's not at your local supermarket or health store, it's still attainable.

If you used the GF flour in any of the cakes in this link: http://www.beliefnet.com/story/156/story_15666_1.html then i'm sure it'd work. They have German, French, Hispanic, and Mexican 3 Kings cake.

Thanks for asking the question though, because i was wondering what to do for a cake this year :)
