Medlar taste like a crab apple to me. The ones I have eaten were more acidic than apples and so I usually made jelly with them.

They are best if picked after a hard frost and then allowed to finish ripening inside. Picked off the tree and eaten, they are usually "green" and have less sweetness and even more acid.
