Generally speaking and in normal situations NO as long as bamboo grooves had been established prior to winter.
Usually bamboo leaves turn yellow and fall off in the spring. They loose their leaves gradually as they are replaced by fresh new ones. In the spring on a healthy bamboo there should be a mixture of green leaves, yellow leaves and newly unfurling leaves.

in south india where i live bamboo looses its leaves as summer sets in ,that is march-april of every year,that would mean bamboo does sesonally loose it's leaves.New leaves however are quick to appear,so the bamboo does not stay stark naked for long.
