Got to have red for health reasons, but am alergic to oak. It burns all the way down.

Yes, there are some Shiraz's that are un-oaked. But when you say you are allergic to oak, do you mean this is a medical condition or that you just do not like oak flavors?

Because oak aging adds several flavors to a wine (such as vanilla and coffee), and on many oak aged wines the taste of oak is not detectable. One thing that oak aging does add is tannins, but you get tannins on unoaked red wines, and some Australian wines add powdered tannin.

Allergies are complex things, and you should be certain exactly what it is about oak that affects you.

A quick google shows Red Deer Station Shiraz Unoaked from Washington State, Linda Domas 'Swensen' Shiraz from Australia, Four Emus Unoaked Shiraz 2004 from guess where :), Naked Grape unoaked Shiraz Canada and many more

So they're out there. Suggest you asking at you local good wine shop.

Does it have to be Shiraz?
I believe that there are other wines, like the Dornfelder from Germany which is also a dry red that isn't kept in an oak barrel.
Or the Italian Valpolicella....worth a shot.
