Bojo, anyone can look up recipe's on-line, but if your wanting the truth, us Americans go to the grocery store, and buy a box of *Bisquick, or we buy the pre-packaged *Pancake Mixes, made by various manufactures. With either of these, we only add Water or Milk, and fry in a pan, using a Non-Stick spray - such as *Pam.

Hi, from Texas!!
Buttermilk pancakes are the best, they have a richer taste & texture than other pancakes made with low-fat or whole milk.

Here is how to make them:

Truck-Stop Buttermilk Pancakes

"A yummy breakfast treat, and very easy to make!! Serve with bacon or sausage, and some fried eggs, wonderful!!! Batter will keep in fridge for a couple of days if you can't make all at once, or you can freeze and make at a later date."

5 eggs
1 1/2 cups milk
6 tablespoons butter, melted
5 cups buttermilk
5 cups all-purpose flour
5 teaspoons baking powder
5 teaspoons baking soda
1 pinch salt
5 tablespoons sugar
DIRECTIONS
In a large bowl, whisk together the eggs, milk, butter and buttermilk. Combine the flour, baking powder, baking soda and sugar; stir into the wet ingredients just until blended. Adjust the thickness of the batter to your liking by adding more flour or buttermilk if necessary.
Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Continue with remaining batter.

Plain Griddle Cakes (pancakes from scratch)

sift:
one cup flour
2 teaspoons baking powder
one-quarter teaspoon salt (not needed)

beat and add:
one egg (optional)

add:
1 cup milk (scant)
stir gradually to make smooth
add:
1 teaspoon melted butter or oil

cook in a hot frying pan, flip pancakes when they bubble, to brown the other side.

Serve with Vermont maple syrup.

These pancakes are sure to be tasty -- if you're watching your sodium intake, you can make them without salt and baking powder, which also contains sodium (as does milk), and they'll probably still be pretty good. We never add salt to anything, but when we omitted the baking powder the pancakes came out a little bit on the glue-ey side.

Pancakes

1 cup milk
1 tablespoon oil
1 egg

Mix together with a wire whisk.

Add in:

1 cup flour (a little more for thicker pancakes)
1 tablespoon baking powder
1 teaspoon sugar
1/2 teaspoon salt

Stir to mix to a lumpy consistency and if you want you can add fresh or frozen blueberries. Pour out onto preheated non-stick skillet (med. low heat). Leave on the first side until the bubbles on top have popped and the edges are cooked, then flip. Cook on the 2nd side until they don't stick to the pan anymore. Serve with maple syrup, peanut butter, jelly, honey butter, just about anything...

This recipe doubles, triples, very well. (we've made it with up to a dozen eggs in a very large mixing bowl!)
