I love cornbread stuffing.
1 tablespoon olive oil

1 medium onion, peeled and finely chopped

2 garlic cloves, peeled and minced or pressed

3 celery ribs, chopped

4 to 5 cups crumbled cornbread
1 tablespoon chopped fresh sage, or 1 teaspoon rubbed dried sage

1 tablespoon fresh thyme leaves, or 1-1/2 teaspoons crumbled dried thyme

1/2 cup chopped fresh Italian parsley

salt and freshly ground pepper to taste

3 tablespoons milk (skim, 1% or 2%, to taste) for moistening

Heat the oil in a large heavy skillet over medium heat. Add the onion and cook, stirring, until just about tender, about 3 minutes. Add the garlic and celery and cook for 1 to 2 minutes, until the garlic is fragrant. Transfer to a bowl. Add the remaining ingredients except the milk, and stir together. Taste and adjust seasoning. Moisten with milk as needed. Fill turkey and place remaining stuffing in an oiled or buttered baking dish. Cover the dish with foil and heat through in a 325 degrees F oven for 30 minutes.

Have you tried Turducken? Great stuff! A deboned turkey, stuffed with a deboned duck, which itself is stuffed with a small deboned chicken!! AWESOME! Here's a kink:http://www.thesalmons.org/lynn/turducken.html

bread crumbs
chopped onion
chicken broth
savory
mix together, should be pretty moist but stable enough to stick together.. Stick it in the bird and cover with the heel of the bread.
Cook it until the turkey is done and scoop it out. It is fabulous. This is a Newfoundland recipe and I can't find any cornbread or other type of dressing that compares to this one..
