Anyone know any outside of Jack Mackeral and Rice and Jack Mackeral Patties?

Seafood Salad Sandwich Recipe
12 slices bread - I like to use brown, but it's up to you
2 cans (125g) mackerel
lettuce leaves
tomato - thinly sliced
cucumber - thinly sliced
mayonnaise
8 oz (225g)coleslaw


Mash and season your mackerel to taste - a squeeze of lemon is nice too.

Lay out four slices of bread, butter them and divide the mackerel evenly between them.

Top with cucumber and spread the underside of the next slice of bread with mayonnaise and then lay it on top of the cucumber.

Divide the coleslaw between the four sandwiches.

Top with tomato and lettuce - spread mayo on the underside of the bread again and put the last slice on top.

This seafood salad sandwich recipe makes a great lunch snack - it's probably not a good idea to take to work, as it could be a bit messy to eat!

We used to make up a simple cream sauce, add chopped onions, some fresh peas or veggie of choice & serve it over toast with either mashed or a baked potato on the side. Yum.....Brings back memories of home.

it's very good as fish chowder with diced potatoes, onion . use milk & cream as in other chowder maybe add some corn . enjoy
