my car will sometimes do this:
when i push on the gas, the engine wont rev up that much, only about 3000 rpm (guessing) and get me about 21 mph before vibrating the car then jolting and revving the rpms and speed up dramattically.. is it transmission (tranny dipstick has bubbles all over it but reads full) or clogged fuel injectors? or what?

sounds like torque converter not un-locking. get a haynes manual, locate torque converter switch plug-in & unplug it.if this solves problem get new switch.

This in that in between stuff, as in, Carburetor and Fuel Injection. IF, it fuel injected check the Throttle Position Sensor (TPS) easy to check with a "Volt-Ohm" meter, just ohm it, repair manual tell how it easy. Most parts stores sell the manual for around $15. IF, it checks good, most likely it the Oxygen Sensor need replaced.
If the first link work you will see how to test the TPS.
Second link tests the Oxygen sensor READ!!! Digital Meter ONLY!!!
