like put a bunch of beer in a pot....put it on a burner and bring it to a boil

yes...you boil off the alcohol, and all you're left with is nasty tasting "cooked" beer. The heat destroys all the flavors.

Why would you want to ruin beer by heating it? When I cook fresh shrimp I boil it in beer and then throw away the beer when finsihed.

Yes it does, when you heat any alchohol product it burns off

Absolutely! Any sufficient heat applied to alcohol will make it evaporate.
